Paying $45++ for deep fried vegetables sounds insane. Then you take the first bite and you get it.

The Milos Special at estiatorio Milos Singapore is everything. Paper-thin eggplant and zucchini chips, fried to a crisp, stacked into this ridiculously gorgeous tower you almost don’t want to touch. Almost. But it’s destroyed in front of your own eyes in seconds.

Light, crispy, addictive. Light, crispy, addictive. The fried saganaki on the side adds this salty, golden bite that cuts through the chips perfectly. Best eaten together with the refreshing, tangy tzatziki dip. So worth it!

Finally tried the viral on the back of all the hype, and the loud red space ate. A been there, done that type of place.

The Fried Burrata ($26++) was the standout of the night. Fresh burrata from Puglia, fried crispy and served with carbonara cream, guanciale and lemon zest — the kind of opener that sets expectations high.

The Spaghetti Carbonara ($32++) is the classic Roman take — egg yolk, pecorino, black pepper — and they’re generous with the guanciale, which I liked.

Our second pasta was the Pappardelle Ragu ($32++), drenched in a hearty osso bucco beef sauce with crispy guanciale and parmigiano.

Portions run on the smaller side across the board, though they offer two half portions of pasta for an additional $10++, which is a good way to try more. Decent by all means, but nothing outstanding.

For pizza, we got the Porchetta 2.0 ($36++) — a white pizza topped with roast pork, potato rosemary, mozzarella and pecorino sauce. Frankly, it didn’t quite come together. The chilli crisp condiment on the side was a pleasant surprise that saved the whole dish.

The Truffle Tiramisu ($18++) was a little dry and fell short on both the coffee and alcohol. The truffle felt more like a garnish than a complementing flavour.

The atmosphere is genuinely fun and worth experiencing. But the food didn’t quite match the energy of the room.
