Few breweries embody the art of restraint quite like Kokuryu.

Founded in Fukui Prefecture in 1804, Kokuryu is one of Japan's most respected and enduring sake producers. Widely recognised as a pioneer in elevating daiginjo sake into the luxury category, the brewery has spent over two centuries refining a style defined by elegance, precision, and balance.

Rather than seeking attention through intensity, Kokuryu's expressions captivate through subtle aromatics, silky texture, and remarkable depth. Each bottle reveals a quiet sophistication — delicate yet structured, understated yet profoundly expressive.

It is this timeless pursuit of excellence that has earned Kokuryu a devoted following among chefs, collectors, and sake enthusiasts around the world.

Featured in our Icons of Sake’s Golden Age collection, selected Kokuryu expressions are now available at up to 30% off.

‘After Hours’ returns with a conversation about stories, identity, and the art of letting things take shape — this time with Daryl Yam Daryl Qilin Yam / 阮 麒霖 , award-winning author, founder of Sing Lit Station , managing editor of AFTERIMAGE , and recipient of the Young Artist Award 2025.

For Daryl, storytelling has always been deeply intertwined with place. As a Singaporean writer, his work is shaped by the people, experiences, and communities that surround him. From finding refuge in books as a teenager to helping build spaces where local readers and writers can connect, his journey reflects a belief that stories are not only personal, but collective — helping us understand who we are and how we belong.

Like winemaking, writing demands both intention and patience. A story may begin with careful planning, but its most meaningful discoveries often emerge unexpectedly. Daryl shares how some of his work has taken years to complete, requiring distance, reflection, and trust in the process. In much the same way, great wines reveal themselves over time, rewarding those willing to wait.

Filmed over a glass of Albariño, our conversation explores the stories that shaped Daryl's literary journey — from finding solace in books, to building communities for Singaporean writers, to discovering that the most meaningful creative work often reveals itself only with time.

Reflecting on his recent Young Artist Award, Daryl shares why storytelling remains, above all else, an act of paying attention: to people, to place, and to the lives unfolding around us.

For many enthusiasts, Juyondai is the benchmark against which all premium sake is measured.

Named after the brewery's 14th-generation proprietor, Juyondai has become one of the most influential names in premium sake. Under the stewardship of the Takagi family, the brewery helped redefine the category by pioneering a style that combined expressive fruit-forward aromatics with exceptional elegance, balance, and drinkability. What is now considered the modern premium sake profile—notes of melon, pear, and stone fruit, supported by a silky texture and pristine finish—owes much to Juyondai's influence.

Renowned for its precision, Juyondai achieves a rare harmony of sweetness, umami, acidity, and finesse, making it a reference point for brewers, sommeliers, and collectors alike. The brewery has also shaped the future of sake through acclaimed rice varieties such as Sake Mirai and Ryū no Otoshigo, which continue to influence premium sake production today.

Produced in extremely limited quantities and rarely seen outside Japan, Juyondai remains one of the world's most sought-after sake labels. Its influence can be seen across an entire generation of breweries, helping define the golden age of modern sake.

Featured in our Icons of Sake's Golden Age collection, selected Juyondai expressions are now available at up to 30% off, while stocks last.
