Traditionally, our natural environments defined our cuisine and consequently, the use of these plants in ritual, medicine, and food built our culture. Our natural environments were sources of nutrition and nourishment that we could afford, access, and utilize with knowledge and skill. We have seen all of that change with the increased convenience of supermarkets, sprawling food chains, and globalized palates.
Food is a key component of identity-building. And as Singaporeans with multicultural immigrant roots, being fascinated with food has almost become a daily obsession. In this day and age, what does it mean to 'eat local'?
