This used to be the legendary Kok Kee — yes, the wanton mee whose recipe was sold for a reported $2.1 million 🍜 Now going as Wai Kee at Jurong West 505, it still does that old-school plate: springy egg noodles tossed in a fragrant sesame-and-lard sauce, thinly sliced char siew and plump wantons. 6am already up and driving down to AMK just for this bowl 🍜 Hui Ji is old-school the way bak chor mee supposed to be — noodles tossed in that chilli-vinegar-lard until every strand coated, handmade fishballs so QQ, meatball, pork liver, and a clean sweet soup on the side. There's a reason the queue forms before most people are even awake 🍤 Soon Soon's prawn noodle broth is the good stuff — simmered deep with prawn heads, pork and pepper till it's rich, sweet and full of that old-school umami. Woodlanders swear by the Marsiling seafood soup stalls, and this couple-run one is the value king 🍲 Cloudy, naturally sweet broth loaded with fresh dory chunks, crunchy prawns, those special minced pork rolls and a refreshing hit of tomato. 7:30am and I'm slurping lor mee older than most of us 🥢 Beo Crescent Lor Mee been at it since 1962 — now at Bedok 216 — and one look at that thick, dark, garlicky-vinegar lor and you already know. Braised pork, fried fish, soft egg, all swimming in that gravy. Add extra chilli and black vinegar, damn shiok. $4 only, the queue don't lie. A plate of braised everything, handed straight to me 🥢 A hidden Teochew spot tucked under an HDB block in Bukit Batok, open till 4am — the full kway chap works: braised pork, chewy pig stomach, tender duck and a soft-braised egg in that dark, fragrant sauce, with silky kway sheets in herbal broth on the side. Possibly the most high-end hotpot I've ever sat down to 🍲 Two broths poured tableside like a ritual — mala on one side, 8-hour bone broth on the other — with premium beef slices, mussels, lamb shoulder, egg tofu, golden mushrooms and jade-green handmade noodles, in a sleek, moody setting that runs till 4am. If you're in Bali and love hotpot, this is the one.
