Impress your guests with this festive Beef Roulade! 🥩✨ Perfect for last-minute entertaining, this dish turns a simple flank steak into a flavourful delight. No need for fancy chef skills — just a bit of flair. Check out the full recipe below and enjoy the deliciousness! 👩‍🍳👨‍🍳

Ingredients:
800g beef flank steak (ask your butcher to do the hard work)
1 onion, sliced
200g mushrooms, sliced
200g baby spinach
1 clove garlic, minced
6-8 slices provolone cheese
2 tsp English mustard powder
2 tsp smoked paprika powder
Salt and pepper


Prepare the filling:

1️⃣ Caramelize onions and set aside.

2️⃣ Sauté mushrooms until soft, season with salt and pepper, set aside.

3️⃣ Sauté spinach with garlic until wilted, set aside.



Making the beef roulade:

4️⃣ Lay the beef flank steak on a large chopping board.

5️⃣ Rub English mustard, smoked paprika, salt, and pepper all over.

6️⃣ Arrange cheese, onions, mushrooms, and spinach.

7️⃣ Roll tightly, secure with twine.

8️⃣ Sear until golden brown.

9️⃣ Insert skewers where the ties are.

🔟 Cut between ties for pinwheels.



For serving immediately, grill both sides quickly and serve with a drizzle of balsamic glaze.

Alternatively, prepare ahead by covering and refrigerating. Grill for an additional minute on each side before serving. 🍽️✨

Homemade Beef Stroganoff always has a place in our hearts (and stomachs), it is a comforting meal and feels like home. 🥩🍝 We’ve used Otway’s Fresh Fettuccini in this recipe and we love its al-dente texture even when we left it cooking in the sauce for an extra minute or two.
This classic dish is packed with tender, juicy beef, earthy mushrooms, and a creamy, rich sauce that's simply irresistible. 🤤You can recreate this dish at home too, it’s really not that difficult!

Ingredients you’ll need:
● 500g beef tenderloin (get our butcher to slice them for stir-fry)
● 1 box brown or white mushrooms, sliced
● Stroganoff sauce: 60g butter, 1 white onion, diced, 4 cloves garlic, pressed, 120ml dry white wine, 350ml FreshStock beef stock, 1 tbsp worchestershire sauce, 120g sour cream, 3 tbsp plain flour
● 1 pack Fresh Fettuccini
● Fresh parsley & black pepper for garnish

For a gluten-free version, simply swap plain flour for cornstarch and make a slurry to thicken the sauce, and go for your choice of Otway’s GF Pasta.

Golden, crispy Ottimo Arancini paired with a rich homemade caponata makes for the perfect appetiser or sharing dish. The sweet and tangy Sicilian style caponata, packed with roasted eggplant, olives, capers and herbs, complements the creamy arancini beautifully.

Save this recipe for your next gathering, recreate it at home with Ottimo Arancini from Huber's Butchery, and don't forget to tag us when you give it a try. We'd love to know which flavour you'll be trying first!

Ingredients:
2 packs Ottimo Arancini (your favourite flavour)
For the caponata: 1kg eggplant, cubed, 2 tbsp kosher salt, olive oil for cooking, 1 large yellow onion (cubed), 1 celery stalk (cubed), 2 cloves garlic (thinly sliced), 1 red bell pepper (seeded and cubed), 3 tbsp tomato paste, 50ml water, 3 large tomatoes (concassé and cubed), ½ cup pitted green olives (roughly chopped), ¼ cup toasted pine nuts, 2 tbsp capers (drained and rinsed), 3 tbsp sherry vinegar, 2 tbsp sugar, a handful of chopped fresh basil, 1 to 2 stalks chopped fresh parsley, salt and freshly ground black pepper to season.

Method:
Toss the eggplant with salt and leave for 1 hour. Rinse, pat dry and roast at 220°C for 20 to 25 minutes, turning once halfway through.
Heat olive oil in a large pan and sauté the onion, celery, and garlic until softened. Add the red bell pepper and cook briefly. Stir in the tomato paste, olives, capers, and water, and cook for 5 to 8 minutes until reduced. Add the tomatoes and simmer for 10 minutes.

Stir in the vinegar and sugar and cook until thickened. Reduce the heat and fold in the roasted eggplant, basil, parsley, and pine nuts. Season with salt, black pepper and additional vinegar if desired. Allow to cool before serving.

For best flavour, prepare the caponata a day ahead and refrigerate until needed. Cook the Ottimo Arancini according to the package instructions. We recommend baking in a hot oven or air fryer directly from frozen until golden and crisp.

To serve, split the arancini in half and top generously with caponata.
