🔥 𝗖𝘂𝗹𝗶𝗻𝗮𝗿𝘆 𝗖𝗹𝗮𝘀𝘀 𝗪𝗮𝗿𝘀 𝗜𝗻𝘀𝗽𝗶𝗿𝗲𝗱 𝗥𝗲𝗰𝗶𝗽𝗲 #𝟰

Game meats deserve a place on more dining tables, and Brisbane Valley Quail is the perfect place to start. Prized for its delicate texture and rich, slightly gamey flavour, quail offers an elegant alternative to chicken while remaining wonderfully tender. In this Culinary Class Wars Season 2 inspired dish, it's paired with a savoury roasted garlic-doenjang paste, a buttery jus reduction and a crunchy pine nut crumble for a beautifully balanced combination of earthy, nutty and umami-rich flavours.

For the Quail:
2 Brisbane Valley Quails, salt and black pepper, fresh oregano or
thyme, butter.

Garlicky Doenjang Paste:
1 head roasted garlic, 2 tbsp doenjang, 1 to 2 tbsp olive oil, a pinch of black pepper.

Pine Nut Crumble:
50g toasted pine nuts, chopped.

Jus Reduction:
1 shallot (minced), 1 clove garlic (minced), 1 sprig fresh thyme, 200g Freshstock Beef Glaze, 5g cold butter.

Method
Mash together the roasted garlic, doenjang, olive oil and black pepper until smooth. For the jus, sauté the shallot, garlic and thyme until fragrant, then add the Freshstock Beef Glaze and simmer until slightly reduced. Whisk in the cold butter to create a glossy finish.
Debone the quail legs while keeping the skin intact, season the meat with the garlic-doenjang paste and reshape. Butterfly the breast, spread with the garlic-doenjang paste and fresh oregano, then roll into a tight roulade.

Pan-grill the stuffed legs until golden, brush with more garlic-doenjang paste and finish with a light char before coating with the pine nut crumble. Sear and baste the breast roulade with butter until crisp, slice, brush with the garlic-doenjang paste and coat with more pine nut crumble. Serve immediately with the warm jus reduction.

🔥 𝗖𝘂𝗹𝗶𝗻𝗮𝗿𝘆 𝗖𝗹𝗮𝘀𝘀 𝗪𝗮𝗿𝘀 𝗜𝗻𝘀𝗽𝗶𝗿𝗲𝗱 𝗥𝗲𝗰𝗶𝗽𝗲 #𝟯

What happens when you swap ordinary cooking oil for beef tallow? You get richer flavour, deeper caramelisation and an irresistible savoury aroma that takes every bite to the next level. In this Culinary Class Wars Season 2 inspired recipe, Huber's Cage-free Chicken Drumlets are pan-fried in Huber's Beef Tallow until beautifully golden, before being coated in a glossy Korean pogye glaze and finished with toasted pine nuts, sesame seeds and fresh spring onions for layers of bold, nutty and umami-packed flavour.

For the Chicken:
1kg Huber's Cage-free Chicken Drumlets, 2 tbsp rice wine, 1 tsp salt, ½ tsp ground black pepper, beef tallow for cooking, 6 stalks spring onions (cut into 2-inch lengths), 3 cloves garlic.

Pogye Glaze:
80ml light soy sauce, 2 tbsp Korean sesame oil, 1 tbsp rice vinegar, 1 tbsp brown sugar, 40g plain flour, 80ml water, 2 stalks spring onions (finely chopped), toasted pine nuts and toasted white sesame seeds.

Method
Marinate the chicken drumlets with the rice wine, salt and black pepper for at least 1 hour. Render the beef tallow over medium heat, then add the chicken, spring onions and garlic. Cook until the drumlets are golden brown and cooked through.

Whisk together all the pogye glaze ingredients. Remove the chicken and wipe the pan clean before returning the drumlets. Pour in the glaze and toss over medium-high heat until evenly coated and glossy.
Finish with chopped spring onions, toasted pine nuts and sesame seeds, then serve alongside steamed rice. Pair it with a chilled soju or beer for the ultimate Korean-inspired feast.

🇸🇬 A taste of Singapore, with a Huber’s twist! To celebrate Singapore’s 61st National Day, we brought our members together for a special cooking class inspired by some of Singapore’s most iconic flavours.

Chef Clement led the class through a live cooking session, using premium, fresh ingredients to create:
🦀 Starter: Chilli Crab Cannelloni
🍲 Main: Bak K*t Teh with Braised Hard-Boiled Eggs, Tofu Puffs & Jasmine Rice
🍥 Dessert: Red Velvet Cinnamon Rolls with Cream Cheese Frosting

For the Bak K*t Teh, we used Linley Valley Pork Ribs, premium Australian pork raised in Western Australia for over 30 years. Their pigs are fed primarily on wheat, barley and locally sourced lupins, with free-range farming and responsible practices at the heart of their approach.

From chilli crab-inspired cannelloni to a comforting bowl of Bak K*t Teh, the class brought familiar local flavours together with a Huber’s twist. We ended the evening on a sweet note with soft red velvet cinnamon rolls and cream cheese frosting.

🌭SAUSAGE OF THE MONTH: Appenzeller Griller🧀

Made fresh in-house with premium cuts of beef and pork, this handcrafted sausage is generously filled with rich, nutty Appenzeller cheese and complemented by air-dried beef for an extra depth of savoury flavour.

Juicy, smoky, and packed with cheesy goodness, it’s one for the serious sausage lovers.

Grill, pan-fry or fire it up on the barbecue until beautifully browned and the cheese turns irresistibly melty. Serve with crusty bread, buttery mashed potatoes, or crispy fries, then load it up with tangy mustard, sauerkraut, or pickles for the ultimate Swiss-inspired feast.

🇨🇭 A little Swiss cooking experience at Huber’s. Level 2 of our Butchery was filled with the most inviting aromas as Chef Clement cooked his way through a specially curated Swiss menu, sharing techniques and little tips with our members along the way.

On the menu:

🫐 Parfait with Willisauer Ringli & Gedörrten Blaubeeren

The star of our Pork Cordon Bleu was Primrose Farms Canadian Pork, fully traceable and raised without growth hormones or chemical feed additives. With its natural marbling and careful rearing, it was a fitting choice for a dish where the pork takes centre stage.

As each dish came together, our members got to experience the flavours first-hand, from watching Chef Clement demonstrate different techniques to tasting each dish as it was prepared. And with every plate beautifully presented, there were plenty of photos taken before anyone reached for their first bite. 📸
