Antonio โ€˜Ninoโ€™ Perrino and his niece Erica are the team of vignerons runningย ๐—ง๐—ฒ๐˜€๐˜๐—ฎ๐—น๐—ผ๐—ป๐—ด๐—ฎย winery. Nino established the estate in 1961 and became a prominent local authority in Dolceaqua, a small town on the Ligurian foothills bordering the French Riviera. His niece Erica joined the winery in 2014 and is now the muscles and the heart in the cellar of her uncle.

Nino makes the same wine today as he was making in 1961. His hole-in-the-wall cellar is hidden in the alleys of the Dolceaqua old town; seven 500-liter barrels, a small vertical press, a table, a row of old bottles and no machinery, because here everything is done by hand (or by feet for pressing). His method is simple; intervening as little as possible is the only accepted philosophy ๐ŸŒฑ

Only 2 cuvรฉes are produced every year; a Vermentino and a Rossese.

A pure garage wine where each of its 6,000 bottles produced annually are cult for authentic wine lovers. Cogito Wines is honoured to be able to import such gems for the fourth year and introduce them to local wine enthusiasts.

Historic and forgotten varieties planted at 450m altitude facing southeast on rocky morainic hills rich in limestone. The vineyards are surrounded by woods, olive trees, hedges and fruit trees, to increase biodiversity as much as possible.

After manual harvest a majority of the grapes is destemmed and pressed with a variable length of maceration on skins, according to the natural rhythm of the vintage (2022 was 7 days with daily pumping over). Only the free-run must, the most precious, is used to extract the most delicate and elegant flavour notes.

1 to 2 months in dedicated stainless-steel tank on fine lees ; no filtration, no clarification, no racking, no added sulfites. The dates of bottling in May are decided according to astrological charts; when seasonal temperatures increase, the secondary fermentation spontaneously occurs on its lees within the bottle (Traditional Method) until Autumn. Unlike Champagne where 2nd fermentation is also within the bottle, a Col Fondo is not disgorged; the ye**ty residue leaves fine sediment in the bottom of the bottle (โ€˜fondoโ€™) giving more complexity, texture and flavours to the sparkling wine.

During this time, the wines will go through sound treatment and chakra healing, using 7 specific gemstones. Aging lasts for 10 months within the bottle before commercialisation of the wines.

๐Ÿพ Col Tamarie displays an exuberant bouquet of citrus, aromatic herbs, with a fresh, crisp, mineral, and persistent flavour. Its long aging complexity is highlighted by the classic scents of bread crust and yellow-fleshed fruit on top of the Meyer lemon. The mouth is lively with an acidic spine; pleasant, soft and well-balanced sip.

When serving the wine, do not skip the residuary โ€˜Col Fondoโ€™ (floating residuals often remaining on the bottom).
An ideal wine for aperitifs or any kind of celebrations. But can also be left aging to develop more complexity.
Col Tamarie Frizzante is a true sparkling wine, that fears nothing.

They have selected varieties that are perfectly suited to their land, convinced that this is the way wine can express the essence of its terroir.

Alberto founded Vigna San Lorenzo in the early 2000s. He replanted 4.5ha of vineyards in 2003 using an assortment of Glera, Bianchetta, Prosecco Lungo, Perera, Boschera, Grapariol, Verdiso, Marzemina Bianca and also Istrian Malvasia and Riesling as these varieties have been present in this region for generations.

Their respect to tradition and sustainability go beyond cultivating grapes that can thrive in this climate; they also tell the story of this land, bringing back forgotten approaches to winemaking such as homeopathic agriculture, lithopuncture and geomancy. A quest for authenticity, truth and freedom. At ๐—–๐—ผ๐—น ๐—ง๐—ฎ๐—บ๐—ฎ๐—ฟ๐—ถ๐—ฒ, biodiversity is the beating heart of an ecosystem and this perfect balance allows every element to live in harmony, far from intensive farming practices. This guarantees healthy grapes rich in extract, essential for a balanced and harmonious wine.

๐—Ÿ๐˜‚๐—ฐ๐—ฎ ๐—™๐—ฒ๐—ฑ๐—ฟ๐—ถ๐—ด๐—ผ was a young passionate Ducati motorcycle when, at the end of his adolescence, he fell in love with the granddaughter of the late great Giuseppe Quintarelli; the man whose wines define the Valpolicella Classico appellations. This is how, at the age of 17 in 1995, the one-of-a-kind wine story of a young Luca Fedrigo began in the heart of an internationally renowned wine region, the ๐‘ฝ๐’‚๐’๐’‘๐’๐’๐’Š๐’„๐’†๐’๐’๐’‚ ๐‘ช๐’๐’‚๐’”๐’”๐’Š๐’„๐’.

Giuseppe ended up passing on his knowledge and experience to his student. The artistry of Quintarelli in the winery has blossomed in the Lโ€™Arco cuvรฉes through a traditional style, long aging, and masterful blending. Luca founded ๐—Ÿโ€™๐—”๐—ฟ๐—ฐ๐—ผ in 1998 on 4.5 ha planted by his father in the 60โ€™s. At the same time he was working for his mentor Giuseppe Quintarelli for a total of 11 years. Both vignerons share the same attachment to tradition, respect for native grape varieties and the refusal to cheat in any way.

Old vines from 2 vineyards planted during the 60's in the heart of the Valpolicella Classico region. Traditional pergola trainings pon gravel and moraine soils from an ancient riverbed. Hand sorting of the grapes before 90 to 100 days of drying in the Fruttaio (the traditional Appassimento). The raisin looking grapes are fermented together for 20 to 25 days, then 1 year acacia tank before 48 months in large traditional Slavonian oak barrels up to 5,000 L.

Only bottled for the best vintages (!) Lucaโ€™s Amarone is the result of a perfect alignment during 4 years of maturation; after the 3rd year of aging, Luca will taste the large barrels and decides if the wine will be labelled as Amarone della Valpolicella or goes into the Pario blend. He learnt from the best, Giuseppe Quintarelli, with an attention to details at every stage of the farming and vinification, before a strict selection according to taste.

๐Ÿท A fantastic promise for another 20 years of aging, surprisingly approachable in his youth after a good time of decanting in contact of oxygen; the more we wait the tannins and structure become more integrated.
Outstanding texture and evolution on the palate! The aromatic Amarone expands and lingers for a complex finish. Deep, dark and powerful; dried fruits, plum, to***co, currant, smoked herbs, and spices are the main aromas.

Lโ€™Arcoโ€™s Amarone became a reference prized by collectors when new vintages are released. Luca is a talented craftsman with the ability to make such an elegant, balanced and supple wine in respect of the pure Amarone tradition ๐Ÿ’Ž

Cariboom is one of the best-known labels amongst Alice Bouvotโ€™s negoces cuvรฉes. She visits wineries to harvest specific plots, then brings the grapes back to her cellar in Arbois and start the natural vinification.

Cariboom 2021 is a blend of direct-press Carignan and whole bunch Grenache comes from the biodynamic vineyards of Claude Ughetto in the Vaucluse. Vinification lasted for 2 weeks and the result is explosive!
Both light and perfumed, aromatically lifted with juicy plums and red cherry, it is a charming crunchy red with fine tannins to boot. The Jura energy best paired with the upcoming Christmas Ham ๐ŸŽ„
