Swedish midsummer in Rigeleje. Midsummer food, dance around the Midsummer pole and having a great time with friends and family.
Like nearly all major Swedish holidays, Midsummer revolves around eating and drinking.
New potatoes, salmon, pickled herring, sausages, gravlax (cured salmon) and of course Swedish meatballs for lunch. And schnapps, we had O.P Anderson Dill and Åhus Aquavit.
In the evening a BBQ.

To cook together with a friend is really special, we laugh and cook. Most of the time it turns out great and sometimes not 🤣Creating memories to share with you all in the autumn. Many, many day’s in my kitchen slowly turning into a cookbook, recipes that are packed with flavours and not to complicated.
We are putting our last touch on it, trying to find a publisher, rewriting, recreating a few dishes. We are getting there! Penelope

Vegan Vietnamese at ”The Kind Bowl” in Singapore.
Founded in 2019 by Hannah Nguyen and Joey Chen, the idea for the restaurant began when they met at Hannah’s vegan restaurant in Norway. Inspired by Hannah’s vegan Vietnamese upbringing and the lack of vegan cuisine options in Singapore, they set out to bring authentic vegan Vietnamese food to the city.
Mouthwatering bowls packed with flavour! We had the following:
•The Kind Pho - Silky flat rice noodles in a umami spiced broth topped with shredded marinated ”no chicken seitan, sweet frizzled grilled oyster mushrooms, sprouts, fresh herbs and lime. ($12.80)
•BBQ Delight - Cold rice-vermicelli noodle topped with grilled soy pork, fresh herbs and mint, fresh salad, pickles, crispy golden spring rolls, topped with roasted peanuts and roasted onions.($14.60)
•Summer Rolls ($4.90)
•Tropical Salad ($5.80)
