Don’t let a number define a wine.

A great wine is not created by a score. It is created by a story, a place, and the dedication behind every bottle.

Wine is shaped by many elements that cannot always be measured:

• Indigenous yeast — the natural microorganisms living on the grapes and in the cellar that guide fermentation, contributing character, authenticity, and a true expression of place.

• Terroir and location — the soil, climate, altitude, exposure, and unique conditions of a vineyard that give a wine its identity.

• Micro-location — the personality of a single vineyard parcel, where even small differences in soil, sunlight, and conditions can influence complexity and character.

• The vineyard itself — the age of the vines, the care of the land, and the countless decisions made throughout each growing season.

• Human passion and craftsmanship — the dedication, patience, and love that growers and winemakers bring to their work every single day.

Wine is a living thing. It is born from nature, shaped by human hands, and continues to evolve with time. Like a story, it grows, develops, and reveals new layers of character, complexity, and emotion as the years pass.

A great wine is not simply tasted — it is understood.

Wines rooted in the foundations of history since Roman times, entrenched in the heart of a territory celebrated by the Tullum DOCG. Wines that have built their essence by digging their way into the soil, by breathing in the microclimate, by listening to the echo of past tradition, just to finally achieve their unquestionable quality.

Wine Knowledge: What You Should Know 🍷

Still think that the more “legs” a wine has, the better the quality? I might have to break your heart. 😅

When you see those beautiful droplets slowly running down the sides of your glass, you’re not looking at a quality indicator — you’re seeing a fascinating physics phenomenon called the Marangoni Effect. 🧠

In simple terms:

• Alcohol evaporates faster than water, changing the surface tension of the wine and creating those famous “tears” or “legs”.

• The more pronounced the legs are, the more they can indicate a higher alcohol content or higher residual sugar level.
• They do not tell you the quality of the wine.

So next time you swirl your glass, remember: the story of a wine is found in its vineyard, winemaking, balance and character — not just in the tears on the glass.

It isn't just about appearance. Dark glass plays an important role in protecting the wine.
Why does it matter?
• ☀️ It helps shield the wine from harmful UV rays.
• 🍷 It reduces the risk of the wine becoming light-struck, which can damage its aromas and flavours.
• 🕶️ It preserves freshness, character and ageing potential.
• 🍾 Clear bottles are usually reserved for white and rosé wines that are intended to be enjoyed while young.
Think of a dark wine bottle as a pair of sunglasses for the wine. It protects what's inside, helping to preserve the quality from the winery to your glass.

The Craft and Evolution of Grappa

Grappa isn't just a spirit; it’s a masterclass in Italian zero-waste tradition. Transforming leftover grape skins, seeds, and stems (vinaccia) from winemaking into a refined, high-proof masterpiece.

The Craft:

The Raw Material: Sourced from pressed pomace—like Amarone in Valpolicella—packed with rich aromas and flavor.

Distillation: Distilled in copper stills to separate harsh alcohols, capturing only the pure, aromatic "heart."

Rest & Age: Enjoyed crystal-clear and fruit-forward as Giovane, or mellowed in wooden barrels to rich, golden amber perfection as Invecchiata.

Sulphites Are Not to Blame: The Science Behind Wine Headaches 🍷

Many people believe sulphites cause headaches after drinking wine, especially red wine. However, scientific evidence suggests this is one of the biggest misconceptions in the wine world.

What are sulphites?
Sulphites occur naturally during fermentation and are also added in small amounts to protect wine from oxidation and bacteria. They help preserve freshness, stability and ageing potential.

Why sulphites are unlikely to be the cause
Red wines often contain fewer sulphites than white and sweet wines. If sulphites were the main cause, white wines would be expected to trigger more reactions.

Dried fruits such as apricots can contain much higher sulphite levels than a bottle of wine, yet most people enjoy them without problems.

What may contribute to wine headaches?

Histamines & tyramine – Found in higher levels in many red wines due to fermentation and skin contact, they may affect sensitive individuals.

Tannins – These natural compounds give red wine structure and ageing potential and may contribute to headaches in some migraine-prone people.

Alcohol – The most common factor. Dehydration and lack of water intake can often be the real cause.

The conclusion
Instead of fearing “Contains sulphites” on a wine label, it is better to understand their important role in winemaking. Enjoy wine responsibly, stay hydrated, and appreciate the science behind every bottle. 🍷

Ever heard of Pinot Grigio Ramato? 🍷

Most people think Pinot Grigio is a pale white wine, but there's another fascinating style that's been enjoyed in Italy for generations.

Ramato, meaning "copper-coloured" in Italian, is made from the same Pinot Grigio grape. The difference lies in the winemaking.

Although Pinot Grigio is used to produce white wine, its grape skins are naturally a delicate pinkish-grey colour. During the production of Ramato, the juice remains in contact with these skins for several hours, or sometimes a little longer, allowing the wine to develop its distinctive copper or light salmon hue, along with greater texture and complexity.

In simple terms:

🍇 Regular Pinot Grigio = crisp, light, fresh and pale.

🍇 Pinot Grigio Ramato = richer, more textured, with delicate aromas of red berries, dried fruit, citrus peel and subtle spice, while retaining excellent freshness.

Ramato is wonderfully versatile at the table. It pairs beautifully with grilled prawns, smoked salmon, roast chicken, mushroom risotto, charcuterie, and mature cheeses.
If you enjoy white wine but are looking for something a little more distinctive—without stepping into red wine territory—Pinot Grigio Ramato is well worth discovering.
