Spent the week preparing for a very special degustacion dinner. Going hyperlocal, regional, and literally, farm to table. My first time to handpick a baboy ramo or native boar from the farm, prep and butcher it for lechon.
Stuffed it with lemongrass, garlic, bay leaves, Sampaoli leaves and twigs, and lots of natural sea salt, peppercorns, and of course, chicken annato oil. Let’s see how this turns out 🤞🏻

For the week we were all joint at the hip… from mornings exploring and participating enrichment activities to daily after parties into the wee hours of the morning.

With our daily lives left back in Manila, we were able to gather our wonderful little community of chefs to support, learn from each other, and share meals and countless drinks together.

As they say, work hard, party harder! Of course,new had the best ring leader.

All the beautiful people I’ve shared this awesome experience with!

Terra Madre Asia Pacific 2025 was such a resounding success. A gathering place for farmers, fisherfolk, craftsmen, mixologists, artists and chefs sharing stories, experiences and learnings. I was definitely proud to be Pinoy!

Congratulations to and all the dedicated people behind them. Thanks and for your warmth and hospitality, my sisters from another mother. You’re are all awesome-inspiring in the work that you do!

And to my friends, of and new, who have made the week a wild and crazy ride! It’s been a privilege ♥️♥️♥️
