Michinoku Ryouri ASPAM

New to Aomori? This local restaurant is a great place to start off your exploration of Aomori cuisine as it’s conveniently located in ASPAM, Aomori’s main tourism info center!

🦪 Their standout dish that you must order is the Kaiyaki Miso, a local dish that combines eggs, miso paste and scallops into a scrambled egg-esque dish that’s served in a huge scallop shell!

🍁 There’s a strong focus on seasonality in their ingredients and you can really see this in their sashimi and seafood rice bowls, where local fish that are in season feature prominently!

🍶 If you enjoy food and alcohol pairings, Michinoku Ryouri offers a wide selection of the finest locally-brewed sake, which go perfectly with the local seafood dishes on the menu!

🏞️ If ambience is a priority, this restaurant does not disappoint! You do have to book in advance and spend some extra money but what you get is a stunning 10th-floor view of Aomori Bay from one of their tatami dining rooms!

🧄 Aomori Garlic Products (青森にんにく商品)
Aomori is where 70% of Japan’s garlic is grown and in Takkomachi, you can find all sorts of novel high-quality garlic products that you can bring home like Black Garlic, Garlic Crackers and even Garlic Cola!

🍎 Goshogawara Red Apple Juice (五所川原リンゴジュース)
Aomori may be renowned for its apples but even within Aomori, only Goshogawara Apples are red throughout, allowing the juice made from them to maintain a unique red shade of colour!

🍘 Nanbu Senbei (南部せんべい)
While Senbei is a common souvenir, Aomori’s Nanbu Senbei has a hidden appeal: It’s designed to also be used in Senbei Jiru, a local specialty soup in Aomori. With this, you can recreate this Aomori staple back in Singapore!

🫙 Aoi Mori Blue Apple Jam (青い森の青りんごハム)
Continuing on the coloured apple products theme is Aoi Mori Blue Apple Jam! Created in 2016 using Anchan Blue Tea, this strikingly-coloured apple spread makes for a delicious and instagram-worthy gift!

🥬 Nebutazuke (ねぶた漬け)
Nebutazuke is made of a multitude of savoury seafoods and vegetables like dried squid, herring roe, kelp and daikon and is the best way to bring back some of Aomori’s premium seafood with you!

[Hakata Ramen Guide]

Fukuoka may be famous for its Yatai (屋台/Streetside food stalls) but if you’re looking for a good bowl of Hakata-style ramen, stay away from these tourist traps!

Instead, we’re here to guide you through the deep world of Hakata-style ramen!

🍜 The Noodles
Hakata-style ramen is characterised by its thinness and hardness. They are made this way so that they don’t overcook and

🍜 The Broth
Hakata Ramen is without question a 豚骨 (Tonkotsu/Pork Bone Broth) Ramen. However, it might surprise you to know that there’s actually two types of たれ (Tare/Sauce) that completely change the profile of the dish!

🧂Shio: This version is the more familiar one, served by famous shops like Ichiran and Ippudo. It’s characterised by the thick, creamy and strong-flavoured soup!

🫘 Shoyu: This version is much rarer and tends to have a deeper umami but is less thick due to forgoing a part of the Tonkotsu broth for the Shoyu tare.

☕ There’s also what’s dubbed "Cappuccino Broth”, where the tonkotsu broth is made to be so thick and flavourful you could drink it like a cappuccino!

🍜 The Toppings
Many stores offer a range of toppings both free and purchasable but for now, let’s focus on the free ones!

🧄 Garlic, whether it be in the form of fried chips or as paste is the go-to for Hakata Ramen, further boosting its flavour and aroma with its addition!

🌶️ Some places offer unique spicy toppings at no extra cost such as doubanjiang or, in Uchida-ya’s case, spicy marinated spring onions! Add them to your bowl to cut through the richness!

Be sure to check your surroundings to make sure you don’t miss out on these bonus ways to elevate your bowl of ramen!

🍜 Conclusion
To end off, Staff san would like to recommend a few places that they visited/were recommended by locals!

🧂Shio: Ramen Tyson @ Canal City
🫘 Shoyu: Uchidaya @ Hakata Ekimae
☕ Cappuccino Broth: Ramen Issou @ Various Outlets including at Hakata Station

Takinami Shokudo

Located in Otaru’s Sankaku Market, Takinami Shokudo was where Staff san was brought to have lunch by their local friend when visiting the area!

🦪 As with all the seafood-serving eateries in the market, Takinami Shokudo boasts extremely fresh, high-quality seafood! Their shellfish and shrimp are particularly fresh as they are prepared-to-order!

🍱 What makes this place unique is its signature dish: The Wagamama Don. You get to customise your own bowl with 3-4 seafood toppings out of a list! (Though there’s an upcharge for more premium items)

Staff san went for Ikura (Salmon Roe), Zuwaigani (Snow Crab) and Ama Ebi (Sweet Prawn) but you can get other options like Salmon, Uni, Scallops etc.!

🦀 Their complimentary miso soup is also made with snow crab stock, making it way better than your average miso soup! You can also add on a snow crab claw for a little extra charge!

The queue tends to get pretty long even though it does move pretty fast so do make your way down early to avoid long wait times! English menus are also plastered around the waiting area so decide on your order before it’s your turn to be seated.

[ - Hokkaido I]

🦪 Soy Sauce Butter & Scallop-flavoured Pringles (プリングルズ ほたてバターしょうゆ味)
A rare umami-packed flavour from the popular potato chip brand that is almost never found outside of Hokkaido! If you don't want to bring back raw seafood products then this is a good alternative!

🍛 Retort Soup Curry (レトルトスープカレー)
One of Hokkaido’s most famous delicacies is often sold in portable, easy-to-prepare retort pouches. Staff san has enjoyed Garaku’s soup curry before so they recommend going with theirs!

🫐 Haskap Berry Products (ハシカプ商品)
This rare berry exclusive to Hokkaido (within Japan) is packed with Antioxidants & Vitamin C! You’ll most often find it in jams, wine and candy during the summer months!

🍷 Furano Fruit Liqueurs (富良野フルーツリキュール)
Furano is known for the extensive range of premium fruits (Notably muskmelons) grown there so it’s only right that the liqueurs they create using these fruits are some of the best in the world! There’s also a ton of variety, with almost every fruit having a liqueur made using it!

🧀 SNOW CHEESE (スノーチーズ)
Sold exclusively in Daimaru Sapporo and New Chitose Airport, this sweet-savoury cheese-centric confectionary is one of the best ways to share Hokkaido’s famous dairy products with friends and family as it keeps at room temperature for up to 90 days!

[ : Dining in Tokyo]

🍜 Abura Soba (油そば)
The lesser-known cousin to Mazesoba, Abura Soba is an even more indulgent noodle dish whose highlight is the aromatic oil drizzled over the dish!

The perfect food to end off a night of drinking, Abura Soba’s strong flavour is sure to make an impact on your tastebuds! You can even add more chilli oil to amp the flavour up!

If you’re looking for an Abura Soba shop that opens till late then we recommend Abura Soba Tokyo Aburagumi! It might be a chain store but it consistently attracts long queues and is found all over Tokyo!

🥘 Monjayaki (もんじゃ焼き)
It may not be visually appealing but Monjayaki is one of those dishes that offers a unique dining experience in terms of its taste, texture and cooking style!

Just like okonomiyaki, Monjayaki is cooked on a grilltop and you’re even supposed to eat it directly from said grilltop. This is what gives it its signature char and smoky flavour!

If the appearance and liquid-ish texture aren’t your cup of tea then you can opt to cook it on the grill top for longer to make it crunchier!

🍲 Chanko Nabe (ちゃんこ鍋)
Ever imagine yourself taking part in sumo wrestling? Well, you can get one step closer to that by eating like a sumo wrestler with this classic hotpot dish invented by the sport!

Because it’s designed to be consumed by athletes, Chanko Nabe is packed with vitamins and nutrients by way of the seasonal vegetables, meat and fish used to make it!

If you really want the authentic version of this dish, there are quite a few restaurants operated by retired sumo wrestlers so seek them out if you really want to eat like they do!

[ : Travelling in Tokyo]

🗼 Tokyo Solamachi (東京ソラマチ)
Located right next to Tokyo Skytree, there’s actually plenty to do in this mall after ascending to the top of the Skytree so you can make the most of your time in the area!

There’s quite a few animal-related attractions in the area, with the Sumida Aquarium and a petting zoo within the mall that has exotic animals like toucans and pangolins!

Merch shops for various franchises abound here, with the most prominent being the Studio Ghibli merch shop, the Skytree Pokemon Center and the famous Kirby Cafe!

If you’re into astronomy, the mall’s top floor is home to a planetarium that also holds shows themed around the cosmos!

🐈 Yanaka Ginza (谷中銀座)
Famous for its Yuyake Dandan Steps, this quieter part of Tokyo isn’t just known for its architecture and tranquility but also for the stray cat population that is adored by its residents!

The shopping street in Yanaka Ginza is the main attraction for its retro 1980s charm, with many cat-themed souvenir shops, cafes and even a beer hall!

Looking for a place to stop and relax for a bit? Check out the nearby Kissa Nikai, which serves up a refreshing and visually-appealing cream soda float as well as a specialty corned beef rice bowl!

✨ Nakano Broadway (中野ブロードウェイ)
With Akihabara becoming far too mainstream and touristy nowadays, Nakano Broadway is now gaining traction as THE anime otaku mecca

With a more retro-style atmosphere as compared to the modern vibes of Akiba, Nakano Broadway has three whole floors dedicated to an assortment of collectibles, manga, retro games and idol merchandise!

For fans of the series JoJo’s Bizarre Adventure over the age of 21, the renowned JOJO-style Bar Dio is located ten minutes away from Nakano Broadway and is a must-visit!
