Ten years ago, the coffee I had here was a total shock. The grind size was far too fine for any dripper I had ever seen, the pouring method involved dumping an entire cup of water all at once, and the extraction time was surprisingly short. All of it completely defied the coffee brewing methods I had learned and known up until then. But the moment I took a sip from that cup, I thought, “What is this? How can coffee brewed like this taste so good?” Today, ten years later, taking a sip from that same cup once again gave me goosebumps with that very same unforgettable flavor.
