When we set out to share our family’s olive oil with a wider audience, we wanted to ensure that the brand we built paid homage to the region this special cultivar comes from.

Ayvaco Extra Virgin Olive Oil comes from Ayvalık, a sunny seaside town in the beautiful Northern Aegean region of Turkiye.

For decades, olive oil from this region has been exported in bulk and blended with other olive oils bound for U.S. and European markets - meaning olive oil buyers have unknowingly consumed lots of Turkish olive oil while also not experiencing it at its highest quality, directly from the source, fresh from the latest harvest.

Ayvaco is your direct link to this region’s special olive oil - smooth, bright, and famous here for its versatility and flavor enhancing qualities.

And tiny newborn olives! 🫒

Where we sit in the Aegean region, the olive flowering season is typically in full-swing by mid-May. This season is essential as it sets the stage for olive growth in the hot summer months and determines olive yield at harvest time in the autumn.

Only a small percentage of the tiny white flowers in each cluster (or “panicle”) will be fertilized and fruit, so the quantity and quality of flowers matters now 🌼

On our morning walk we saw a range of clusters - some still with bright blooms, many that have already turned, and many teeny tiny new olives forming 🫒

We’ve had plenty of rain in the preceding weeks and the sun is high and hot, so we’re hopeful for a plentiful and healthy growing season🤞🏼

Today, on World Farmers Day, we celebrate the hands that turn soil into food — the farmers, the growers and the producers who dedicate themselves to creating something nourishing, honest and beautiful for their communities. 🌿

As third-generation olive oil producers, we feel grateful to continue the path our grandparents paved before us. What began generations ago in our family groves along the Aegean coast of Türkiye has become a responsibility we carry with pride every single day.

There was a time when farming was not a part of our plans. Living in big cities and being a part of corporate life, we did not imagine ourselves returning to the land. But we eventually had a realization: producing olive oil from our own fields and sharing it directly with people who would otherwise not have access to it felt more meaningful than anything else we had ever done.

To grow something with patience, care and honesty — and to bring the story of our land to tables across the United States has become one of the biggest privileges of our lives.

Today, we celebrate all farmers who continue to protect traditions and keep agriculture alive for future generations. 👨‍🌾

The surest sign to us that spring has officially arrived in the Aegean is the return of artichokes, green plums, and fresh green almonds to Ayvalık’s weekly public markets 🌿

It starts with terroir - the soil, climate, and sea breeze of Ayvalik that shape the olive itself.

We use a monocultivar and never mix oils from previous seasons.

From precise harvest timing to careful handling and immediate processing, every step is intentional. Nothing is left to chance.

There are no middlemen in our process. We import directly and store our oil in a climate-controlled, dark environment to protect its freshness from the moment it arrives to the moment it reaches you.

Our latest harvest earning a Silver Award at NYIOOC is simply a reflection of everything that came before it.
