Honey never spoils...
because it is a natural killer of bacteria.
Pots of honey were found in ancient Egyptian tombs. It is still edible, even though it has been underground for several thousand years. Honey does not spoil, because bacteria that destroy other products cannot live in it. Honey has three properties that make it antibacterial.
Honey is acidic. It contains gluconic acid, which kills bacteria. Honey contains a small amount of hydrogen peroxide, which is used to make bleach. It also kills bacteria. Honey is hygroscopic, that is, it contains very little water. And without water, bacteria cannot live.
