The great pig experiment update #1.

We took four pigs to the processor this week. Two Berkshires, one Mangalitsa, and one American Guinea Hog. They were all approximately the same age. They were all fed the same food. Hanging weights were 232 and 222 lbs on the Berkshires, 217 on the Mangalitsa, and 206.5 lbs on the American Guinea Hog. We pick them up tomorrow and we'll update with comparison pictures!

Our first four pigs are at the processor. It has taken us 477 days to get to this point. That is 954 feedings, rain and shine. Chasing them around to get them from one pasture to another. Lugging 11,448 pounds of feed in 50# bags. Filling up buckets of water and mud wallows.

When you buy from a small farmer, please remember that they have literal blood, sweat, and tears invested in their products. They had angry 450 pound pigs charge them. Their backs hurt from moving feed. They had to wade through mud, muck, and god only knows what else. They built fences, fixed fences, and watched with horror as the piglets escaped the fence...again. They have hog-tied and drug pigs into a trailer after chasing them around the property for 3 hours. That same farmer probably purchased those fence posts, wire, feed, and supplies at locally owned shops. Not the cheapest option, but they understand how important it is to buy local.

So if you have a chance to support a local farmer, don't haggle. Pay what they ask or tell them no thank you. You aren't going to find a better pork chop at the grocery store. Yes, we know it's expensive. (Please see 11,448 pounds of feed.) But we are probably already taking a loss and that is before you figure in the 954 feedings.

Just wanted to update everyone on our Mangalitsa pigs! We are thrilled to be able to be part of the Mangalitsa Breed Association and Registry to ensure the preservation and genetic diversity of these awesome wooly pigs. We just had our first registerable litter of Mangalitsas from the amazing Piper. But we also have Fodor and Ilka that we will be registering. This process involves tagging, proving lineage back to the import pigs, and DNA testing. Many question why we go to the trouble and expense of registering our pigs, especially if they are destined for bacon. For us, it is a simple answer. Preserving the breed is of the utmost importance. The Mangalitsa has a rich history that had been literally centuries in the making. They are well-tempered pigs with great personality that require very little intervention. They are a culinary marvel that we can't wait to experiment with. We have both pure blonde and color combination pigs. We hope in the future to have the trifecta of blonde, red, and swallowbelly Mangalitsa so we can work to preserve the various colors, as well as the breed as a whole. When you buy Mangalitsa meat from us, you can rest assured that you are part of ensuring the future genetics of the breed.

We're processing chickens today and we need room in the freezer! All previously processed frozen Whole Chickens will be $4/lb. Fresh chickens will be available tomorrow and Tuesday for $5/lb whole and $7.50/lb in quarters or pieces. We also have some older chickens we are processing that would be great for making stock, they are $3.50/lb.

All of our chickens are free ranged and supplemented with locally milled feed!

They say the best time to plant a fruit tree is 10 years ago, the second best time is now. Well, the same goes for Hugelkultur. The best time to start one is last year, the second best time is now! We are pulling pounds of summer squash a day from just a few plants. And the pumpkin, you ask? Well, put it this way, if we don't post for a few days, it is because we have been strangled in our sleep by a pumpkin vine. Matt put down a stick to mark the growth two days ago, it it has grown OVER 2 FEET. And it is doing the same on five vines! If you need some squash this week, let us know! We have squash, chicken eggs, quail eggs, and chickens available!

Read to the end for a special opportunity!

Following our aquaponics journey? We spent some time on upgrades today (an aerator and light for the fish tank) and I pruned all the basil. If it's been a bit since you've been by, you would be amazed by the growth! The bare root strawberries went in a month ago and are already setting fruit. The basil was planted April 10th and is going great! We planted 68 varietals and 60 of them are growing. I replanted the other 8 today, so we'll see how they do. Next week we'll taste test all 60 and determine our top 20 based on culinary profile, growth rate, and overall appearance. On June 27th we will be hosting a five-course basil tasting dinner for area chefs. We will offer two seats to our dedicated followers! We are thrilled to welcome Piper home to Rutter's Ranch and Project Victory Gardens! Piper (of Arpad and Eszter) is a registered Mangalitsa from the Bácska line. She is bred to Heisman (of Houdini and Magnolia) from the Halmaj line. Twenty years ago, the Mangalitsa were on the brink of extinction. Through the dedicated work of a few individuals in Europe and the United States, we are now able to bring one to the farm and continue working to build the breed.

Thank you so much to Rick and Catherine Topel of Smoky Mountain Mangalitsa for entrusting Piper to us! Your farm is beautiful and we look forward to visiting when we don't have a pig trying to escape the trailer!
