We miiiight be at the Farmers Market next week...

06/01/2019

So, Allison is busy in the field and I’m sneaking in to give you all a little update. Something will happen this summer with Valley Mama but it won’t be a CSA. Most likely it will be a market stand when we have things available and we will let you all know. We are busy working on some new concepts to connect people with good healthy food options. So please make arrangement with other local producers for full CSA shares and we will tell you more as things come clear.

Crispy Rosemary And Garlic Beet Chips

Beets....I triple this recipe, and even then they don't last long around here. If you haven't tried beet crisps, you really should :) -M

Is there a veggie that you don’t love? And by “don’t love,” I mean loathe to the point that your spouse spends time contemplating your disgust? I don’t know why, but that man insists on planting beets despite the fact that I can’t stand them cooked, raw, pickled or poached. Fortunately, I have found…

Creamy Parmesan Swiss Chard Gratin

Chard.... I make a version of this, without the bacon, using different cheeses keeps it interesting. (Smoked Guda is our favorite.) -M http://www.finecooking.com/recipes/swiss_chard_gratin.aspx

I like the variety of Swiss chard called "Bright Lights," which has yellow and pink stalks, but any Swiss chard will work fine. The chard leaves just need wilting for this gratin, but be sure to sauté the stems until lightly browned; this softens their flavor.

More ideas for what to do with your Bok Choy.... http://www.alexandracooks.com/2015/06/24/bok-choy-salad-with-sesame-almond-crunch/

Last summer I learned that Swiss chard, like kale, can be eaten raw and is especially delicious with a lemony dressing and toasted garlic breadcrumbs. You would think this revelation would have opened my mind and inspired experiments with other greens I had assigned to the cook-only category. It did…

In the next few weeks some of the Asian greens we will start offering are Mustard Greens, Mizuna, Gun Sho, Vitamin Green, and a few different Napa Cabbages. Here are some tips for cooking with Asian greens.
