Sometimes things just don’t go like you tell them they are supposed to. 😂🤣😂. So, during my learning curve, I’ve discovered (with the help of a friend) that sometimes starters give a false positive due to the presence of other wild bacteria being evident. It gets all puffy and cool looking causing you to do stupid things before they are time. Soooo, long story short, my starter faked me out, I jumped in despite second thoughts and used it to soon and made what was supposed to be my FAVORITE flavor profile of all time in a bread to only have an untasty learning opportunity. Soooo, into the bin it will go and I will continue to nurture my little Red Cat until she is actually ready to give help to make deliciousness. #patienceisavirtue #bakeanotherday #learningcurveday #womenshobake #womenwhoferment #grateful #learningislife

This is day 3 of trying to perfect my sourdough. While I totally made mistakes today, used the wrong flour and forgot the salt, it still turned out pretty delicious. It has, in my opinion, the perfect crust to chew ratio. Tomorrow will be day 4 of experimental bread making. I’m totally digging this bread making more than I ever thought possible. Weekend goals are chocolate chip and extra seedy sourdoughs. Next week? Different flours!

Last week I created a B**a, an overnight yeast ferment dough. My family loved it! This week I am learning to make sourdough loaf after a few days of hydrating an amazing sourdough starter I received from a great friend @badseedbakes in Vermont. Cheese is always one of the last things people want to give up when becoming plant positive. I totally get it, so I’m trying to find us options to meet our needs. Only 3 more weeks until this cultured plant positive Bleu is ready to eat. I’m so excited by this. If it works, I will be offering it for sale along with my Moxarella balls for caprese salads and pizzas.

I think these little gems are going to be my 2020 addictions. Garlicky baked cauliflower and simple roasted carrots. Plant Positive and gluten free!!!! Good in so many ways! In wraps, as dippers, as that snack you let sit on the counter and eat one every time you walk through the kitchen until you can’t believe you ate the whole pan and now wish you made twice as many.

My Grandmother’s Table has been on quite a hiatus for a few years, but has not disappeared completely. I’ve been learning so much about food. Everything I thought I knew has been changed and my passions for this industry has exploded and taken a turn.

While it is still our goal to create amazing and delicious food experiences for our customers, we will now only offer plant positive menus.

After a great day with a friend in Lancaster buying pretty organic produce and visiting an amazing plant and herbal shop the only thing you can do is infuse some organic honey with some organic chai tea spices by first cooking it and now letting the sun do its job. It's been well over a year since I've done any real event cooking. I needed time to heal my soul after working in a food service environment that totally sucked the passion for cooking out of me. I am not made to cook for 500 people a day. I'm made for cooking things like this...fun, small events for under 100 people where I can be creative and passionate with food, not pumping out 500 portions of the same thing everyday. Thank you Cold Nose Lodge and Rayne Reitnauer for giving me this opportunity to be creative again. To feed my soul and stoke my passions for food again!

Some days changing your lifestyle is easy, in fact I find most days to be pretty easy. Yesterday? Well yesterday was not one of those days. While I had the most amazing Integrated Body Work session with Patricia J. Morrison followed by a great time shopping with Colleen Warmingham (The Minimologist) I ate poorly and am paying the price for it today. Why is it that we innately know what is good or in my case not so good for us and yet we allow ourselves to succumb to the fat and carbs anyway? Just because it tastes good, doesn't mean we shouldn't say no. Sooooo, lesson learned. No breakfast or lunch (except a banana and a handful of nuts...a pretty good start actually) and 8 hours of activity followed by garlic knots, ice cream and pizza because your starving does not make a strong body. This is not how I usually behave, so grateful for my peppermint oil and a new day. The only I person I cheat on days like that is myself...I'm worth so much more than that. How about you? Ever have days like this?

What an amazing afternoon at the The Lehigh Valley Health Fest! Thank you to everyone who came out and listened to my story. Today we made a spin on some old Italian favorites. Alfredo Sauce and Ricotta Cheese. Simple, delicious and with a much lower fat content that our family favorite.

Alfredo Sauce
1/2 cup cashews, soaked overnight
1 onion, diced
2 cups vegetable broth (separated)
Himalayan pink sea salt
Fresh cracked black pepper
1/4-1/2 cup nutritional yeast
1 bulb garlic, roasted
Juice of half a lemon
Pepper flakes, optional

Sauté onion in a shallow pan with a little broth till translucent and lightly browned. Add small amounts of additional broth as needed until onions become soft.

When onions are done, put them along with the remaining ingredients into your blender (I use a bullet) and blend on high until pureed smoothly. Add veg broth as needed to get to the consistency you want. Toss with your favorite hot pasta.

Ricotta Cheese (for dessert)
1 1/2 cups raw cashews, soaked in water overnight and drained (reserve water)
1 tblsps. Honey
1 heaping tsp nutritional yeast
Pinch Himalayan pink sea salt

Place all ingredients into blender. Blend until smooth adding the reserved cashew water as needed for consistency.

Serve with fresh fruit and your favorite balsamic vinegar.

If making savory ricotta, replace the honey with some roasted garlic and salt, pepper and oregano to taste. Use in your favorite pasta dish.

It's been months since I've done any updates and all I can say is that I've been re-creating My Grandmother's Table to fall more in line with who I have become as a person and a chef. Several Ah Hah Moments over the last few months have given me the impetuous to regain control of my health and the journey has been anything but boring! So if you are anywhere near Northampton Community College today stop by the Health Fest, Italian has never been so exciting! Join me as My Grandmother's Table takes on a new adventure.

Today's experiment...amazingly delicious and semi-nutritious chocolate chip cookies...I reduced the sugar, increased protein and lessened the amount of simple carbs by substituting the white sugar with stevia and swapping out 3/4 of the all-purpose flour with almond meal...simply lovely!

How can you NOT love buying fresh and local?? Carrots and beets fresh picked from Beets Workin' Farm, fresh apricots, cherries and snap peas from Red Cat Farm and delicious bread from The Wayfarer Bakery...I am a happy girl.
