Doner Kebab? Gyro?
No matter what you call it, I call it delicious!

Deli sliced boneless lamb and pork and stacked it in alternating layers on the trompo. Seasoned well with a Mediterranean seasoning and put it on the 26” Weber that was set up with 3 charcoal baskets for indirect grilling.

Sliced off the crispy parts and into a pita!

Tonight’s lumberjack breakfast for dinner.
Pork sausage patties, pork sausage links, ham, bacon, 2-farm fresh eggs and ho-made banana pancakes with maple syrup.

I see questions all the time about smoke wood.
Where do you get? How long do you season it?

I use mostly cherry, cherry is a fruit wood and doesn’t need long seasoning. If can even be used green with a hot base fire.

This is me harvesting some cherry wood for today’s smoke session.
