Banh canh cua - crab udon soup
One of my favorite comfort soup dish.
1 bag of vietnamese udon
1 whole dungeness crab
1 lb pork hocks (optional)
1 tbs of crab soup paste (rieu cua)
2 tbs of annato oil
2 tbs corn starch or tapioca starch
Optional toppings
Pork ribs
Pork rinds
Fried shallots
Fried fish cakes
Shrimp
Blanche pork hock for 10 minutes. Clean thoroughly and put in clean pot of water. Cook on low until tender (about 1 hour)
In a separate pan, put 1 tbs of oil and shallots in. Cook until fragrance. Add in crab and crab soup paste. Stir lightly so you don't break the crab apart. Season with salt, fish sauce, sugar, and black pepper to taste. Back to the broth. Take out just enough in a small pot. Season broth tp taste. Add 1 tbs of crab paste. Add udon and wait to boil. Mix corn 1 tbs of corn starch in cold water. Carefully put it in your udon pot while continue to stir steadily. Once it comes to boil again, put in bowl. Add in pork hockey and crab. Enjoy.
