This hearty, 20-minute Southwest Black Bean with veggies is a quick, one-pan meal loaded with protein, fiber, and bold Tex-Mex flavor. It relies on fresh, crisp vegetables and pantry staples. Corn is the only grain I use. If you wanted to up the protein profile you can add ½ pound (or more) of cooked turkey or beef :)
Ingredients
1 tbsp olive oil (or avocado oil)
1 medium yellow or red onion, chopped (I also add green onion)
1 red bell pepper, diced (I like mine with yellow pepper)
3 cloves garlic, minced (I use jarlic, most of the time)
1 can (15 oz) black beans, rinsed and drained (I use organic when I can)
1 cup corn kernels (I use white shoepeg corn)
1 cup diced jÃcama (This adds a nice crunch and fiber)
1 can (14.5 oz) fire-roasted diced tomatoes with their juices
2 tbsp chili powder (I prefer dark chili powder)
1 tsp ground cumin
½ tsp smoked paprika (I use a little more than half)
Salt and black pepper to taste
Optional toppings: shredded cheddar or pepper jack cheese, diced avocado, fresh cilantro, lime wedges.
Heat the olive oil in a large skillet over medium-high heat. Add your chopped onions and peppers, cooking for 4-5 minutes until softened.
Add Veggies & Spices: Stir in the garlic and your spices. If using dense veggies like jÃcama, add them now and cook for 5-10 minutes until tender.
Warm Through: Add the rinsed black beans, corn, and any other quick-cooking vegetables. Stir to combine and let everything warm through for 2-3 minutes.
Remove from heat, sprinkle with cheese (and cover until melted if desired), top with fresh cilantro, and serve.
This is great on it's own, served over rice or in a tortilla shell.
