Non-scale victory?? I mean I’ll take any excuse to shop for jewelry 😂

But seriously, I’ve lost 50 pounds in the past 15 months and my rings were dangerously loose.

What should I make next?? 🍅 I’ve been making caprese, pasta pomodoro and marinara sauce… I’ll have some more poblano pep...

Had a pile of garden tomatoes that needed to be used, so I turned them into a quick pasta pomodoro 🍝 20 minutes, weeknight-easy, and a crowd pleaser.

How I made it:

🍝 Cooked thin spaghetti in salted water to al dente, reserved some pasta water

🍅 Sautéed chopped tomatoes in garlic olive oil from BD Provisions Severna Park, seasoned with salt, pepper, oregano, and red pepper flake

🧄 Added fresh chopped garlic once the tomatoes softened, cooked until fragrant

💧 Stirred in ½–¾ cup pasta water plus the spaghetti

🌿 Tossed to combine, tore in fresh basil, seasoned to taste

🧀 Sadly I was out of Parmesan cheese.. but I would definitely recommend adding it

Simple, seasonal, and done before you know it.
