Shelf stable doesn't have to mean sawdust.
That 0.83 on the meter is water activity—and it's one of the numbers that tells us our Pepperoni Bites have reached shelf stability.
But getting there without destroying the texture takes time.
We start with LHP starter culture and dextrose, then ferment our Pepperoni Bites for roughly 15–18 hours in a warm, high-humidity environment. The culture consumes the dextrose and produces lactic acid, dropping the pH and creating that traditional fermented flavor in pepperoni.
Then comes smoke and heat, followed by equilibration and a controlled drying process.
The goal isn't to remove every bit of moisture. It's to reduce the available water microorganisms need while keeping enough moisture in the meat to preserve the texture and flavor we're after.
A lot of shelf-stable meat sticks are dry, hard and almost sawdust-like. We dialed in the process so shelf stability doesn't come at the expense of texture or flavor.
0.83 aw. Shelf stable. Still tender. Still loaded with flavor.
Small Batch. Big Flavor.
