The Business Development team was in Miami this week for the Airports Council International Latin America-Caribbean Annual Assembly Conference and Exhibition (ACI LAC). This important Conference brings together senior executives of the airport industry from all over the world and features discussion topics that shape the way in which the aviation industry is quickly evolving. We’ve got wicked good news in Boston with the addition of three new restaurants in BOS’ newly expanded Terminal E. It’s a trio of concepts from Boston natives including a renowned woman-led distillery, a New England pizza mainstay, and one of the best-known families in the entertainment industry:

Boston Harbor Distillery led by Rhonda Kallman one of America’s craft beverage industry thought leaders and a pioneering woman in the beer industry.

Sal's Pizza is one the most recognizable pizza names in New England. The pizza brand is the brainchild of Sal Lupoli who is an East Boston native who opened his first shop in the 1990s with the support of his family.

Wahlburgers had been an award-winning restaurant south of Boston. Mark, Donnie, and Paul created Wahlburgers to share the family’s love of great food with Chef Paul’s menu of handcrafted premium burgers, sandwiches, salads, and sides.

This past Sunday, Ralick "Ra" Wiggins saved a life. While making a routine delivery to SSP America's Four Peaks Brewery at the Phoenix Sky Harbor International Airport, Ra saw a crowd of people gathered around a woman lying on the ground in the middle of the concourse. She wasn't breathing.

"I did what I thought I needed to do in the situation," Ra reflects. He took action and performed the Heimlich maneuver. After the third squeeze, the obstruction in the woman's esophagus was removed and her life—saved.

The paramedics arrived; the passenger was able to continue on her trip, and Ra went about his day. Everyday heroes reveal themselves in the most exceptional moments. Cheers, Ra.

Big week in Chicago! We trained more than 200 team members as we gear up for the opening of a new Central Market at the Chicago Midway International Airport. The Central Market will feature a terrific line up of restaurants including the Lettuce Entertain You’s, RJ Grunts and popular M Burger. The Market will also include Chicago legend Reilly’s Daughter, a Dunkin, Beecher's Handmade Cheese, and a White Sox Bar.

Just prior to Hispanic Heritage Month, SSP America joined forces with OLÉ Mexican Foods, INC. to offer the most authentic Mexican food in airports across the Americas using the most authentic Mexican ingredients. A Latina, woman-owned business—Olé Mexican Foods was conceived when Veronica Moreno began making and selling tortillas in Atlanta, Georgia using techniques passed down through generations. Veronica is now President of a company with products in restaurants and grocery stores across the United States, and she’s the boss of her son Edgar Moreno, President of Sales and Marketing.

“It’s not easy working for your mom,” Edgar laughs. “I can’t escape disappointment at home or professionally. But under her leadership, Olé operates with a passion for our Mexican heritage, our values, and the meaning of family gatherings.” For generations, the Moreno family has been coming together on weekends for meals centered around one big table. “It’s with a commitment to quality, authenticity, integrity, accountability, and good citizenship that we, as a Mexican American company, are inspired and motivated every day.”

“I am so grateful Americans recognize Hispanic Heritage Month,” Veronica explains. “There are so many new flavors and fusions of cultures that are the result of this wonderful diversity. Our commercial and marketing teams recently visited Buffalo Trace in Kentucky. During their visit the team learned about the rich history of Buffalo Trace Distillery, tasted a selection of their bourbons, and selected two barrels to be bottled just for SSP America to serve at a select group of our bars and restaurants. The team also selected a barrel that’s on its way to Mexico and will be used to produce a single barrel of tequila for us. We’ll market that as a single barrel tequila aged in Buffalo Trace Bourbon barrel.

This visit was part of a larger team meeting as the group celebrated their FY 2023 successes and finalized FY 2024. Great job to everyone!

The SSP America team was proud to attend SSP Group plc’s global leadership conference called Momentum this week. Key take aways:

1. Seize the Momentum: SSP Group CEO Patrick Coveney encouraged us to seize the day by fully leveraging the momentum we’ve built to accomplish achievable goals in the year ahead.

2. Embrace Priority Initiatives: In addition to achieving commercial success by executing our Value Creation Plan, it’s critical that we continue to focus on a wide range of initiatives which fully engage our teams, ensure we operate safely and embrace a focus on sustainability.

3. Keep an Eye on the Future: We must keep an eye on the larger aviation and societal influences which will shape our business including a prioritization of achieving net zero emissions for many industries, the ever-expanding influence of generation z, and the food trends which promise to influence our customers, and therefore, our menus.

4. Safety First. And Second: As we say at SSP America, safety first. And second. Operating in the safest manner is our number one operational priority. We are continually building a safety infrastructure because safety is everyone’s responsibility.

5. Build a Culture of Care: Nothing happens at SSP America without people. As a result, building a culture of care where our team members feel engaged, valued, and encouraged to pursue a fulfilling career is a top priority.

Raquel Vasquez has been a bartender with SSP America at the Colorado Springs Airport for over 16 years. As a loyal, dedicated, and consistent professional, she's a huge asset to a team that has experienced a few changes in the past decade and a half. Raquel is the certified trainer for SSP America's Mountain Vista Grille. She addresses the team with new topics every week during shift huddles and is in tune with every detail.

"Raquel has every system behind the bar dialed down to a T. She's PASSIONate about her work and every single little detail. She works whenever we need her to, and it's an incredibly luxury to have someone like her on our team," explains Director of Operations, Susan O'Neil. And beyond her day-to-day responsibilities, Raquel is simply a great person—everyday.

"She shows sincerity from the heart—always. She keeps her composure and communicates affirmative and reassuring messages, which is so important as a leader," Susan continues. Raquel is an amazing woman who is an ambassador of what SSP America is all about. Cheers to you, Raquel.

SSP America's culinary team concluded National Food Safety Education Month by completing Preventative Controls Qualified Individual (PCQI) training under the guidance of Director of Food Safety, Vanessa Cranford. The U.S. Food and Drug Administration recognized curriculum for becoming a ‘Preventive Controls Qualified Individual’ was conducted over 2.5 days with an interactive team and hands-on applied exercises on food safety integration application.

SSP America's Retro Rewind limited time offer celebrated legendary arcade games omnipresent in every bar and restaurant throughout the 80's. Our commercial and creative teams wanted to do something innovative and unexpected this fall. They delivered with a curation of drinks that revived the lively spirit of arcade mania and used unique garnishes like boba balls and chocolate pearls—making Retro Rewind both classic and on-trend.

The exceptional bartenders across SSP America's operations mastered specs for the Pinball Wizard, Frogger, and Game Token cocktail—as well as the Pac-Man mocktail. Each drink was as alive in appearance as it was in spirit, and passengers can attest to their taste and quality.

September is National Food Safety Education Month! Food Safety begins with cleaning and sanitizing. SSP America porters and dishwashers are trained, dedicated, and consistently effective in the basics of cleaning and sanitizing dishes and utensils. Preventing cross contamination and allergen cross contact is so important to our business.

SSP America's dishwashers use high-temp dish-machines, low-temp dish-machines, or three-compartment sinks. When using a dishwasher, they scrape off grime, leftover food and residue, and rinse with water prior to placing plates and utensils in the dishwashers. High-temp dishwashers use temperature as a sanitizer, while low-temp dishwashers use a chemical as a sanitizer.

"Wash," "rinse," and "sanitize" behavior for the three-compartment sinks:

Dishwashers scrape off leftover food,

Wash dishes using warm and soapy water,

Rinse soapy residue using hot water in the second compartment, and

Sanitize dishes in the third compartment with a chemical sanitizer.

Finally, dishes and utensils are air-dried and not wiped down with a towel.

SSP America joint venture partner, Judith Byrd of Byrd Retail Group, is a lawyer, travel retail specialist, and successful entrepreneur. She serves on the boards of several prominent professional, civic, cultural, educational, and social justice organizations. Ms. Byrd has been a fixture in the aviation travel industry for decades. We asked Ms. Byrd, "What's your passion?".

"I'm curious about why people buy, what they buy, and where and how they buy. I'm also curious about lifestyles, aspirations, and trends and how they influence the marketplace. Airports are interesting places in which to analyze economic trends, lifestyle patterns and buying behavior because you've got folks coming in from absolutely everywhere—" Judy explains. "Trends are ever changing, and of course, there's fads and other crazes that pass quickly. It’s important to distinguish between the two.”

So, how can we be proactive? How can we stay on top of lifestyle trends to keep concessions programs fresh and exciting?

"We’ve got to keep our ears to the ground, be nimble, fast, and know when to pivot," Judy affirms. "But then again, we have to know that when a concept works, stick with it. In general, companies running restaurants or retail business in airports need to pay more attention to the street. We need to observe what's happening around us, take these observations, and know how to use them!”

SSP America had an absolutely FABulous time at The Moodie Davitt Report's 2023 Airport Food & Beverage (FAB) + Hospitality Conference and Awards. Several renowned industry professionals from around the world, including SSP Group plc CEO Patrick Coveney, gave insightful talks on the most pressing topics in the business—from the evolution of the airport lounge, to leading women in the industry and sustainability. And SSP Asia Pacific really knows how to throw a party. There were fireworks and champagne—plenty of excitement, a killer DJ and glow in the dark face paint. Deputy CEO Pat Murray and Senior Vice President, Brands and Concepts, Pat Carroll were given each other's name tags (don't worry, we mix them up all the time).

And Martin Moodie and Dermot Davitt handed out a few awards as well.

Bad Egg Breakfast Bar was named Airport Casual Dining Restaurant of the Year.

Oakland Draft House was named Airport Bar of the Year.

The Farmer's Market Featuring Indiana Grown was named the regional winner for 'sense of place' and received a highly commendable award for the same category.

Nourish by The Dirty Apron won a highly commendable regional award for Airport Health-Centered Offer of the Year.

Pat Murray was recognized for his Outstanding Career Contribution to the Airport Food & Beverage Industry.

And last but certainly not least, long-time JFK T4 team member Savitre Sukhram was awarded the Front of House Star Individual Award for the Americas because of her commitment to service over a twenty-plus year airport career. Congratulations, Savitre.

Travel Food Experts at Chicago Midway International Airport lack proper staffing and the amount of food to take care of customers lining up for breakfast. You need to get better at forecasts , logistics & customer service !

We are so grateful to Hudson, Vantage Airport Group, Chicago Department of Aviation (CDA), Chicago O'Hare International Airport, and Midway Partnership for collaborating to make this happen. Of course thank you to SSP America for introducing me to the airport space over 10 years ago! We could not be more excited! We are also very proud to feature chocolate from three talented, local, women-owned businesses - Amy's Candy Bar, Katherine Anne Confections & Veruca Chocolates.
“It takes a village” has never rang more true. We are here to celebrate our 17 year anniversary today thanks to the hard work of so many people to whom we want to give our deepest gratitude.
