Grilled Steak & Shrimp Kabobs
Ingredients:
For the Kabobs:
1 lb sirloin or ribeye steak, cut into 1-inch cubes
1 lb large shrimp, peeled and deveined
1 red bell pepper, cut into 1-inch chunks
1 yellow bell pepper, cut into 1-inch chunks
1 medium red onion, cut into wedges
1 zucchini, sliced into thick rounds
2 tbsp olive oil
Salt and pepper to taste
1 tsp garlic powder
1 tsp paprika
1/2 tsp onion powder
1/2 tsp dried oregano
For the Marinade:
1/4 cup olive oil
2 tbsp soy sauce
2 tbsp fresh lemon juice
2 cloves garlic, minced
1 tbsp fresh parsley, chopped
1 tsp honey (optional, for sweetness)
Salt and pepper to taste
Preparation:
Marinate the Steak and Shrimp:
In a small bowl, whisk together olive oil, soy sauce, lemon juice, minced garlic, parsley, honey (if using), salt, and pepper.
Place the steak cubes in a resealable bag or shallow dish and pour half of the marinade over the steak. Do the same with the shrimp in a separate bag or dish. Seal both bags or cover the dishes and refrigerate for 30 minutes to 1 hour to marinate.
Prepare the Vegetables:
While the meat is marinating, prep your vegetables: slice the peppers, onion, and zucchini into 1-inch chunks or thick rounds.
Assemble the Kabobs:
Thread the marinated steak, shrimp, and vegetables onto skewers, alternating between the meat and vegetables. Be sure to leave a little space between each ingredient for even cooking.
Grill the Kabobs:
Preheat the grill to medium-high heat.
Brush the kabobs lightly with olive oil and season with salt, pepper, garlic powder, paprika, onion powder, and dried oregano.
Place the kabobs on the grill and cook for 2-3 minutes per side for the shrimp (until pink and opaque) and 4-5 minutes per side for the steak (depending on your desired doneness). Turn the kabobs every 2-3 minutes to ensure even cooking.
Serve:
Once cooked, remove the kabobs from the grill. Serve immediately with your favorite side dishes like rice, grilled vegetables, or a fresh salad.
Enjoy! These Grilled Steak & Shrimp Kabobs are full of flavor and perfect for summer grilling, offering a delicious balance of tender steak, juicy shrimp, and fresh vegetables!

Air Fryer recipe for Sausage and Cheddar Egg Bites.
Air Fryer Sausage & Cheddar Egg Bites
This recipe makes 4-6 egg bites, depending on the size of your molds. You may need to cook in batches.
Ingredients:
1/2 cup cooked and crumbled pork sausage (about 2 ounces/60g)
Tip: You can cook this on the stove while prepping the rest of the ingredients.
4 large eggs
2 Tbsp milk or heavy cream
1/4 cup shredded sharp cheddar cheese (plus extra for topping)
1/4 tsp salt
1/8 tsp black pepper
Optional: 1-2 Tbsp chopped chives or parsley for color
Equipment:
Small mixing bowl
Whisk or fork
4-6 silicone muffin cups or small oven-safe ramekins that fit in your air fryer basket.
Non-stick cooking spray
Instructions
1. Prepare the Mix-ins
If your sausage is raw, cook it in a skillet until browned, then crumble it finely.
In a small mixing bowl, whisk the eggs, milk/cream, salt, and pepper until well combined and slightly frothy.
Gently stir in the cooked sausage crumbles and 1/4 cup of cheddar cheese. If using, add the chives or parsley now.
2. Fill the Molds
Lightly spray the inside of your silicone muffin cups or ramekins with non-stick cooking spray.
Pour the egg mixture into each mold, filling them about 2/3 full. The eggs will puff up while cooking.
Sprinkle a small pinch of the remaining cheddar cheese over the top of each egg bite.
3. Air Fry
Place the filled molds into the air fryer basket. Do not overcrowd; ensure there is space for air to circulate.
Air fry at 375°F (190°C) for 10-15 minutes.
The cook time will vary based on your air fryer model and the size/material of your molds.
Check for doneness: The egg bites should be puffy, golden brown on top, and a toothpick inserted into the center should come out clean.
Carefully remove the egg bites from the air fryer. Let them cool in the molds for 2-3 minutes before gently popping them out.
4. Serve:
Garnish with a little fresh parsley or chives, if desired, and serve immediately!
Would you like to adjust any of the ingredients, like swapping the sausage for bacon or adding a vegetable?

🍝🧀 One-Pan Creamy Baked Orzo with Meatballs and Spinach 🧀
Ingredients:
For the Meatballs:
1 lb ground beef or ground turkey
1 egg
¼ cup breadcrumbs
2 tablespoons grated Parmesan
1 teaspoon dried oregano
2 cloves garlic, minced
Salt and pepper to taste
For the Orzo Base:
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 cup orzo
2 ½ cups chicken or vegetable broth
2 cups fresh spinach
½ cup heavy cream
1 cup shredded mozzarella
¼ cup grated Parmesan
Salt and black pepper to taste
Topping:
½ cup shredded mozzarella (for the top)
Fresh basil leaves, torn or chopped
Directions:
Preheat your oven to 400°F (200°C).
In a large bowl, combine ground meat, egg, breadcrumbs, Parmesan, oregano, garlic, salt, and pepper. Mix until well combined. Roll into 1-inch meatballs.
In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the meatballs until browned on all sides, about 5–6 minutes (they don’t need to be fully cooked through). Remove and set aside.
In the same skillet, reduce heat to medium and sauté chopped onion until translucent, about 3 minutes. Add garlic and cook for another 30 seconds.
Stir in the orzo and toast for 1–2 minutes. Pour in broth, bring to a gentle simmer, and stir occasionally for 5–6 minutes.
Add the cream, spinach, mozzarella, Parmesan, salt, and pepper. Stir until spinach wilts and cheese begins to melt.
Nestle the browned meatballs into the creamy orzo mixture. Top with extra shredded mozzarella.
Transfer skillet to the oven and bake uncovered for 15–18 minutes, or until cheese is bubbly and golden brown on top.
Remove from oven, scatter fresh basil over the top, and serve hot straight from the skillet.
