Today was a very good day!

We spent some time cupping our newest coffees and they were all outstanding in different ways. We cup every roast as a standard quality control measure but today we are sampling different roast profiles of the same beans to figure out which one best highlights the origin character. After today, it's clear our roast profiles are almost fully dialed in and we are on track to start releasing our newest coffees starting in June.

Market Season is finally here and we could not be more excited!!

Come out and see us this weekend on Saturday will be hosting their community market with local vendors and all the things you need for your garden.

Then Sunday morning join us for the kickoff of the on the village green! We will be out here every Sunday all summer long offering coffee samples, fresh roasted coffee beans, pourover demonstrations and much more! Come by and chat coffee with us on what looks to be a beautiful Sunday!

This Month's Feature - Midnight Blend

The idea for this blend really did come to me at midnight - or at least, around midnight - after researching the thermodynamics of our roasting process and how it might interact with the density of the beans.
Because we roast using hot air rather than a heated drum, we can use much higher air temperatures without burning the beans. The big catch is that the beans themselves must be sufficiently dense to take the high heat without roasting unevenly. I went for it and blasted our most dense bean with our highest heat and the results were incredibly surprising. After some tweaking, the high heat version of our Ethiopia dry-processed coffee came out rich and velvety with an intense body and the complexity of the darkest chocolate - think 90% cacao dark - balanced with a hint of the subtle berry and floral notes that mark our single origin. It held up well on its own, but was a little harsh on the palate so we blended in some dark and smooth Brazil that brought a hint of toasty graham cracker to the mix. The combination brings an enchanting sensory experience from the slightly sweet, dark amber maple syrup on the nose to the heavy mouthfeel and rounded chocolate bitters finishing out with lighter notes that momentarily linger after each sip. The Brazil also adds good crema for those of you that are into espresso.
I am not a dark roast fan personally, but this one still retains enough of the origin character to be interesting and does not venture into the smoky and charred flavor of some of the more prevalent dark roasts available.

Conceived in the wee hours of the night, our Dark Roasted Ethiopian blended with Brazil makes for a bold and robust experience unlike any of our other offerings. Our aim is to retain the character of the origin bean with each roast, even using our blends as a way to highlight complimentary qualities of different origins. To do this we roast almost all of our beans pretty carefully and lightly. This blend is a big exception to that rule - still roasted carefully but it is our darkest roast ever. Flavors of molasses, bakers chocolate and graham cracker along with the slightest hint of blueberry are just what you need for late nights or early mornings. Great as espresso but also as a drip, grab some today and satisfy all of your darkest (roasted) dreams.

Tasting notes from the Roastmaster:
This lot from Peru surprised me on the very first roast. Knowing the region and altitude I thought this would make for an excellent base for any blend we created, but that it wouldn't have enough complexity to stand as a single origin. I could not have been more wrong! The first aromas on a pour-over were incredible. It was clean and sweet like nougat- not even kidding that the first thing that came to mind was a Three Musketeers Candy Bar. The body is fairly light but very clean and sweet, flavors of honeysuckle and a hint of apricot acidity. Not overly complex, but enough to really enjoy without having to dissect too much. A really well-balanced coffee so no surprise that it is regularly our best seller. For our visual learners out there, see the tasting card.
