🌙 Late Night Snack: Garlic Butter Pizza Roll-Ups
These are crispy, cheesy, and ready in about 15 minutes!
🛒 Ingredients
4 flour tortillas
1 cup shredded mozzarella cheese
20–24 pepperoni slices
2 tablespoons pizza sauce
2 tablespoons melted butter
1 teaspoon garlic powder
½ teaspoon Italian seasoning
Grated Parmesan
Fresh parsley (optional)

🌮 Friday Night Mexican Fiesta: Cheesy Chicken Fajita Skillet
A quick, family-friendly dinner that's packed with flavor and perfect for a Friday night!
Ingredients
2 boneless, skinless chicken breasts, sliced
1 tbsp olive oil
1 packet fajita seasoning (or 2 tbsp homemade)
1 red bell pepper, sliced
1 green bell pepper, sliced
1 small onion, sliced
1 cup corn
1 cup black beans, drained and rinsed
1 cup cooked Spanish rice
1½ cups shredded Mexican cheese blend
Fresh cilantro (optional)
Lime wedges

Toppings
Sour cream
Guacamole or sliced avocado
Pico de gallo
Jalapeños
Tortilla chips or warm flour tortillas

Directions
Heat olive oil in a large skillet over medium-high heat.
Season the chicken with fajita seasoning and cook for 5–7 minutes until browned.
Add the peppers and onions and sauté until tender-crisp.
Stir in the corn, black beans, and cooked Spanish rice. Cook for 2–3 minutes.

Today's lunch is a fresh and flavorful Grilled Chicken Pesto Sandwich paired with a crisp garden salad and fresh fruit. It's the perfect balance of protein, healthy fats, and fresh ingredients to keep you energized all afternoon.

Grilled Chicken Pesto Sandwich
Ingredients
1 small ciabatta roll, sliced in half
4 oz grilled chicken breast, sliced
1 tablespoon basil pesto
1 slice fresh mozzarella
2 tomato slices
Handful of arugula or spinach
1 teaspoon butter or olive oil (for toasting)
Side Salad
Mixed greens

Directions

A hearty breakfast that's perfect for busy mornings and guaranteed to keep you full.

Ingredients
4 large flour tortillas
8 large eggs
½ lb breakfast sausage, cooked and crumbled
1 cup frozen hash browns, crispy
1 cup shredded sharp cheddar cheese

Every bite is crispy, creamy, spicy, and packed with Southern flavor. This is the kind of sandwich that disappears fast around my table!

🌶️ Cajun Shrimp Po' Boy
Prep Time: 20 minutes
Cook Time: 10 minutes
Serves: 4
Ingredients
Shrimp
1½ lbs large shrimp, peeled and deveined
1 cup buttermilk
1 cup all-purpose flour
½ cup cornmeal
2 tsp Cajun seasoning
1 tsp smoked paprika
1 tsp garlic powder
½ tsp onion powder
½ tsp cayenne pepper (optional)
Salt and black pepper
Vegetable oil for frying

Cajun Remoulade
½ cup mayonnaise
1 tbsp Dijon mustard
1 tbsp Creole mustard
1 tsp hot sauce
1 tsp Cajun seasoning
1 tsp lemon juice
1 garlic clove, minced
1 tsp chopped parsley

Sandwich
4 toasted French rolls
Shredded lettuce
Sliced tomatoes
Dill pickle slices
Thinly sliced red onion
Lemon wedges
Instructions
Marinate the shrimp in buttermilk for 15–20 minutes.

5 large eggs
1½ cups whole milk
½ cup heavy cream
⅓ cup light brown sugar
2 tsp vanilla extract

Pinch of salt
2 cups fresh peaches, peeled and sliced
4 oz cream cheese, cubed
Cinnamon Crumble
½ cup all-purpose flour
⅓ cup light brown sugar
1 tsp cinnamon
¼ cup cold butter, cubed
Vanilla Glaze
1 cup powdered sugar
2 tbsp milk
½ tsp vanilla extract

Directions
