The Atlanta vegan community is such a warm, comforting space, and we’re so lucky to have each other as friends! Leah Garces hosted a Halloween get-together over the weekend, and it felt soooo good to see and hug these beautiful souls after so long apart. Not to mention that the vegan food spread was TOP NOTCH. I brought my veganized Mote Pillo (Hominy and Tofu scramble). The super easy and tasty recipe is on the blog at coffeeontuesday.com if you want to try it out for yourself. Homeschooling for the WIN today!! The kiddos read a book called “Out of Left Field” by Ellen Klages, about the struggles of girls in baseball. Then we had a celebrity guest speaker come teach them how to play the game: Meggie Meidlinger from the US Women’s National Baseball Team! 🤩 What an amazing experience!
