Posted • Looking to add more black beans to your diet? Join us for this weekend's market and check out Chef Jay's cooking demo. He's making vegan black bean chili that will be available for sampling! We'll be in our usual spot in front of Ebenezer Baptist in Stone Mountain. The market is open 11 AM - 3 PM, with the cooking demo running from around 11:30 AM to 1:30 PM!

Rufus Estes (b. 1857 - d.1939) was a former slave who worked as a chef aboard luxury railway cars operated by the Pullman Company in the 19th century. His recipe book Good Things to Eat, as Suggested by Rufus: A Collection Of Practical Recipes For Preparing Meats, Game, Fowl, Fish, Puddings, Pastries, Etc. of over 600 recipes was published in 1911.[5] Estes wanted to be recognized both as an accomplished professional chef and a former slave.[6] It's among the first cookbooks written by a black chef (Robert Roberts, Malinda Russell and Abby Fisher wrote earlier cookbooks).
