Matt Cooks Atlanta

Matt Cooks Atlanta Welcome to the Facebook home of Matt Johnson, an Atlanta chef for hire. I love preparing multi-course tasting style menus using in season local produce.

Cooking has been part of my life since I was fourteen, learning by being in the kitchen, asking questions, and exploring any recipe that inspired me. My food is shaped by my Southern roots, my love of French technique, and the flavors I’ve gathered from traveling. After a career in technology, I’ve returned to what feels most natural — cooking for people directly as a personal and private chef. For me, food is a love language, a way to care for others and create memorable moments around the table. My goal is simple: to craft thoughtful, delicious, and personal meals inspired by my journey and tailored to the people I cook for.

End of summer sea bass dish… sea bass over a dumpling squash purée, alongside summer squash ‘casserole’, blistered tomatoes, and pea shoots. Topped with fresh pickled radish. We pair this with a very interesting and unique Chardonnay from eieiowines .

Whoops... resetting the clock. A moment of inattention and now three stitches... Doc said it was a "textbook" cut, "just like what they train us on".

Evidently, my new Shun offset serrated knife has a REALLY sharp point. :)

Iberico pork cooked to a medium using sous vide, finished in butter and sage, and served with a blueberry gastrique underneath. I used a new technique I learned to make ribbons of squash to serve alongside tournée fondant potatoes.

Squash didn't come out perfect, but it was all about trying something new with friends.

Y’all know I favor savory over dessert so this is my first (pêche) tarte tatin… because the first time you make something should be for friends.

Want to avoid explosive iceberg lettuce diarrhea in the future... stop buying produce sourced from countries where sewage is used as fertilizer. Also, eat seasonally and locally... it tastes better, supports a farmer, and seriously nobody likes the tomatoes that you can buy in December.

Our local farmers are at various farmers markets and farm stands and actually care about what they raise.

What to do with 9 quarts of fresh figs from the neighborhood tree? Make preserves of course. Thanks to and for the Kai PRO utility knife I used to cut all those figs… wondering how many more jars I’m going to need for the next batch as the tree planted years ago still has more figs than I can count on it.

Probably one of my best duck dishes… sous vide duck seared slowly on a cold pan, roast carrots, carrot top pesto, gooseberries, and a very sexy sauce made with duck demi-glace infused with juniper berries and gooseberries. We paired it with a Two Brothers Pinot Noir from .

Friday dinner with friends… started with scallop crudo with parsley chive and basil oils, roasted corn, Fresno peppers, and oranges. Main course was .campogrande Iberico pork loin with garnet sweet potato purée, roast carrots, and broccolini; served with a gooseberry pan sauce. The pork was seared then finished in the oven to a juicy and delicious medium temp. Dessert was favorite - cheese. Petit basque with rose confit, a Brie, and chablochon all dressed with a sorghum syrup.
