The Fresh Harvest: Blistered Tomatoes & Burrata Recipe
Uses acidity and creaminess to complement the herbal notes of the Tomato Basil pasta.
Ingredients:
1 bag (approx. 12oz) Fresh Bites Tuscan Tomato Herb Pasta
2 cups Cherry or grape tomatoes
3 tbsp Extra virgin olive oil
2 cloves Garlic, smashed
1 tbsp Balsamic glaze
1 ball (4-8oz) Fresh Burrata cheese
Handful of fresh basil leaves, torn
Flaky sea salt
Instructions:
Start your pasta in boiling salted water.
In a wide pan, heat olive oil over medium-high heat. Add the cherry tomatoes and smashed garlic.
Cook, shaking the pan occasionally, until the tomato skins begin to char and "pop," releasing their juices (about 5โ7 minutes).
Stir in the balsamic glaze and a pinch of salt.
Drain the pasta (reserve a little water just in case) and toss it into the tomato pan. Toss for 60 seconds so the homemade-cut texture grips the fresh juices.
Plate the pasta and place the cold Burrata ball on top. Tear the cheese open at the table so the cream flows over the warm herbs. Top with fresh basil.
