I've been staying away from the salads, but today I had a simple cucumber salad with red onion, smoked cheddar, olives, pepperoncini, and I threw in an okra from mama's garden. Cut some breasts off the bone for chicken strips, and did some loaded baked potatoes.

Whole Picnic Ham. It has more flavor than the shank, but it will be saltier. I boil instead of baking. Helps it stay juicy and removes some salt. You could also add in a potato to help draw out more salt. Don't forget to save the hambone for greens, beans, or soups.

Spinach and artichoke dip.
I use 1 brick of cream cheese, 1 jar artichoke, about 3/4 bag of fresh spinach and the rest of the ingredients I use my own discretion, lol! Smoked cheddar, extra sharp cheddar, bacon pieces, garlic, a splash of lime or lemon juice, crushed red pepper, garlic powder. I put in everything but the spinach and baked 375° until it's bubbly. Stir in the spinach and bake until it wilts. You can eat it as a dip, or stuff chicken, salmon, or beef with it.

Fresh collards, rice and beans, cornbread, and salmon. I always use smoked meat in my beans and greens. Sometimes turkey; sometimes pork. If you don't eat meat, you could add smoked paprika, or liquid smoke. I also like to add veggies to my 15 bean soup. A little celery, onion, garlic, bell pepper, and okra.

Carrots, peppers, onion, garlic, and celery, seasoned, and sautéed until tender. Toss in some flour and cook a bit, then add in some chicken, or beef stock. Whisk well to avoid lumps. (I always add a splash of vinegar and a dash of hot sauce to my gravy. In my opinion, it needs the acidity. )

Fresh green beans, macaroni and cheese, deviled eggs, meatballs. The meatballs are ground beef and pork mixed together. Baked, then drained. Then I added barbecue sauce.

I only had to fix myself dinner today, so quick and simple does it! Fried fish and potato skins. I nuke my potatoes for about 5 minutes in the microwave and then transfer to a 400° oven. Once tender, I slice open, scoop out some of the center, then put a little butter into halves. Baked until golden on both sides. Add salt and pepper, cheese and bacon. I also did a little garlic and onion powder. Filling and delicious! (Of course you could use a toaster oven, or air fryer. )
