As the days get shorter, the sunny hours become more valuable, and we put a lot of time and effort into prep to make sure that if you choose to spend some of your sunny Saturday hours with us, it'll be worth it. 🫡

We work hard to make sure our space is clean, comfortable, and well-stocked. Hand-folded napkins, Hand-filled small batch b**rs, and hand-made scratch soup. All ready to go for you guys. Our Steak & Potato poblano cream soup is back on, Judy got in early today to make more after you guys showed up and sold us out yesterday.

The hardest thing we've done today is having to decide what picture to place first in this post. On one hand, Gratification is back, and better than ever, but then Chef Judy whipped up this Arrachera & Potato Poblano cream soup for this chilly Friday, and it's incredible.

The soup: Primo Pils-marinated Skirt Steak, golden potatoes, in a creamy poblano cream broth. Topped with seasoned crema, and cilantro oil, with fried flour tortilla chips for the most pleasant dipping experience.

The b**r: Gratification is back, and this time: it's triple dry-hopped. We took what we learned from tweaking this base recipe in the latest Foreign Chemistry, and applied it to this batch of Gratification. That means the biggest dry hop we've ever done, featuring Citra, Citra Cryo, Mosaic, Mosaic Cryo, and Rakau hops, collectively at about 7 pounds of hops per barrel. Aroma and hop character is boosted further with the addition of Citra hop terpenes, with pronounced notes of orange juice, pineapple, and juicy tropical fruit layered atop dank pine, fresh-cut evergreen, finishing with a balanced bitterness.

That still not enough to warm you up? We've also got $7 Weller Special Reserve old fashioneds, tonight only. We're open for lunch and dinner service from 12-11pm.

Over the years we've had no shortage of full circle moments here. From brewing countless b**rs with people we admired as we were learning the craft, to now brewing b**rs everyday in our taproom - across the street from the balcony where some of those earliest batches were made. What's this have to do with Don here? Back in 2016, Don used to sell us the grain for those b**rs in a little homebrew shop in Plainfield.

Since then a lot has changed. We kept making high gravity b**rs, started brewing commercially, all while Don became an industry powerhouse, helping drive growth at several now-iconic Chicagoland breweries over the past decade. Don has always been a friend of Foreign Exchange, and we're now excited to welcome Don as our new director of hospitality.

You'll get to know Don as well as we do before you know it, but we'll give you a head start: He loves a good helles l***r, his favorite movie is Home Alone, his favorite show is The Simpsons, he enjoys spending his free time in the great outdoors, and him & his wife just welcomed a new baby boy.

Stop in for Hocus Pocus trivia tonight, it kicks off at 6PM, and we're open for lunch and dinner service from 12-9pm.

Pronounced aromas of caramel and toasted "cheesecake restaurant chain" brown bread fill the brewery today as we brew a high gravity-version of our imperial brown ale, bound for a rest in bourbon barrels, and of course, fresh to your glass.

While we've always colored outside the lines a bit with our b**rs & b**r styles, we've always stuck to the same core principles: brew unique, approachable b**rs made with the finest ingredients we can source, brewed with attention to tradition and detail.

The Bears play the Packers at noon, and we'll have the game on in the taproom. Stop by and enjoy this game day feast, featuring buttery texas toast grilled cheese, paired with a pint of The Usual, and our Spicy Wagyu Chili. This hearty slow-cooked chili is made in-house with all American wagyu beef, kidney beans, and Prairie Steam, our amber l***r brewed with our friends at Riverlands Brewing - St. Charles IL. Each bowl comes topped with thin-grated cheddar cheese and Marconi Foods giardiniera. Score all 3 for only $20.

Anyone that's visited us has met Becca. She's was the 2nd person we ever hired, and has been responsible for leading our staff in providing the exceptional service you guys have come to know and love, and now... she's leaving us. 💔

We want to thank Becca for the last 512 days she's spent with us. She's grown with us and has been the catalyst for many members of our staff to grow professionally themselves. Since day one, she's been one of the hardest working members of our team, and is one of the most resilient women we know. As she steps away in favor of a new career path, she leaves us with some big shark slippers to fill. 🦈

Stop by and raise a glass with Becca, she's here today, with her last public-facing day of service being tomorrow night. Bring her an Ultra Black Monster energy drink, tease her about her love of the Packers, or buy her a shot of tequila. We're here today from 12-11pm.
