Hypothesis: a less expressive yeast will create more expressive hop character in our Gratification recipe. ๐งโ๐ฌ
Conclusion: For the first time since November 2020, "Foreign Chemistry" returns. This batch focuses on amplifying hop character and aroma with changes at the fermentation level.
By using a more neutral and less expressive yeast, the qualities of the Citra & Galaxy hops become more raw, sharp, and defined. In this batch we also utilized Cashmere hops, as well as Citra hop terpenes. Muting yeast esters results in the citrus, dankness, and bright lime zest from the terpenes popping with pristine clarity, while the Citra, Galaxy, and Cashmere hops jump out of the glass with a juice box tropical sweetness and prominent aromas of pineapple and passionfruit.
In short: Incredibly fruit-forward, aromatic, bursting with hop character and one of the least bitter IPAs we've produced to date. It's delicious, and it's on draft now. We're open until 9pm today.
