BTS: Expectation vs. Reality (The Dragonfruit Files) 🧪💖

I was so excited to bring Red Dragonfruit to the Seasonal Spotlight menu. I mean, look at that color! 🌸✨

In its raw state (on the left), it’s electric neon pink with those beautiful black seeds. It has this unique, earthy-vanilla vibe that I just knew would make a stunning "edible gem."

But then... the kitchen happened. 🔥

To make Pâte de Fruit, the fruit has to be cooked to a very precise set-point. And under that heat, the dragonfruit did a total pivot.

The Color: That brilliant pink turned into a ruddy, dull brownish-red (see the right side) with hints at it's previous brilliance. Not exactly "gem-like."

The Flavor: The earthy vanilla notes vanished. Instead, it tastes like a very subtle, very quiet cherry. 🍒💤

The Verdict: Even though there’s a lovely, lingering hint of the original fruit if you savor it, it just doesn't meet the "wow" factor I want for you.

I’m not in the business of selling "just okay." If it’s on the Posh Plum menu, it has to be a 10/10 in color, texture, and character. This one is headed to the "staff snack" pile!

Patience is the secret ingredient. ☁️ Poshmallows are notoriously temperamental; a humid day can turn them into a sticky mess. But after waiting for the perfect atmospheric window, these cured into the pillowy, airy cubes they were meant to be. ✨ The perfect companion for our Posh Sips Heirloom Spiced Hot Cocoa—I’ve been tucking sample pouches of our spiced cocoa into orders today to celebrate the season! ☕️❄️
