Christmas Cookie Icebox Cake | Festive, Fluffy & Made for Making Memories

I made this one snowy afternoon with the grandkids, and we all giggled layering cookies and cream while sneaking a few red and green candies. It’s the kind of no-bake dessert that’s as fun to make as it is to eat.

Ingredients:
1 package graham crackers (or any holiday cookies)
2 cups heavy whipping cream
½ cup powdered sugar
1 teaspoon vanilla extract
1 cup crushed peppermint candies or holiday sprinkles
½ cup red and green chocolate-coated candies
Green sugar sprinkles, for topping

Instructions:
1. In a large bowl, beat the heavy cream with powdered sugar and vanilla until stiff peaks form.
2. Spread a thin layer of whipped cream in the bottom of an 8x8-inch dish.
3. Add a layer of graham crackers or cookies to cover the cream.
4. Spread more whipped cream over the crackers, then sprinkle with crushed peppermint and candies.
5. Repeat layers 2 more times, ending with whipped cream on top.
6. Decorate with green sugar sprinkles and extra candies.
7. Cover and refrigerate overnight, or at least 6 hours, until the cookies soften into cake-like layers.

Snowy Christmas Jelly Bars | Jiggly, Sweet & Dusted with Winter Magic

These remind me of the treats my mom would bring out after Christmas dinner—cool, chewy little bites that sparkle like fresh snow. We always had to sneak one *before* dessert was officially served.

Ingredients:
2 (3 oz) boxes strawberry or cherry flavored gelatin
1½ cups boiling water
1½ cups cold water
1 envelope unflavored gelatin
½ cup milk
½ cup granulated sugar
1 teaspoon vanilla extract
Powdered sugar, for dusting

Instructions:
1. In a medium bowl, dissolve the red gelatin in 1½ cups boiling water. Stir in 1½ cups cold water. Pour half into a greased 8x8-inch pan and refrigerate until set (about 1 hour).
2. For the creamy layer, combine unflavored gelatin with ¼ cup cold milk. Let sit 5 minutes to bloom.
3. Heat the remaining ¼ cup milk in a saucepan with sugar until hot but not boiling. Stir in bloomed gelatin until dissolved. Remove from heat, then add vanilla. Let cool to room temperature.
4. Pour creamy layer over the set red layer and refrigerate until firm.
5. Pour remaining red gelatin over the top and chill again until fully set (about 2–3 hours total).
6. Cut into squares and toss gently in powdered sugar for that snowy finish.

Old-Fashioned Christmas Cream Mints | Soft, Sweet & Just Like Grandma's Candy Dish

Every December, my grandma kept a little dish of these on her side table—and we kids would sneak one every time we walked by. Cool, creamy, and melt-in-your-mouth soft, they taste like Christmas memories.

Ingredients:
4 oz cream cheese, softened
4 cups powdered sugar (plus more for dusting)
½ teaspoon peppermint extract
Red and green gel food coloring
Granulated sugar, for rolling

Instructions:
1. In a bowl, beat softened cream cheese until smooth.
2. Gradually add powdered sugar and peppermint extract, mixing until a soft dough forms.
3. Divide dough into three portions. Leave one plain, and tint the others red and green.
4. Roll each color into small ropes, then twist or press colors together and cut into bite-sized pieces.
5. Roll each piece in granulated sugar to coat, then place on parchment paper.
6. Let mints air-dry at room temperature for 12–24 hours until firm on the outside but still soft inside.

Pecan Caramel Cheesecake Bars | Creamy, Crunchy & Drizzled with Sweet Southern Comfort

This is the kind of dessert my aunt would serve after Sunday supper—laid on the table with pride, laughter in the air, and just enough forks to go around. It’s rich, gooey, and full of old-fashioned pecan pie charm.

Ingredients:
**Crust:**
1½ cups graham cracker crumbs
¼ cup granulated sugar
½ cup unsalted butter, melted

**Cheesecake Layer:**
2 (8 oz) packages cream cheese, softened
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract

**Topping:**
¾ cup brown sugar
¼ cup heavy cream
2 tablespoons unsalted butter
1 cup chopped pecans
Whole pecans for garnish
Caramel sauce, for drizzling

Instructions:
1. Preheat oven to 325°F. Line an 8x8-inch pan with parchment and lightly grease.
2. Mix graham cracker crumbs, sugar, and melted butter. Press firmly into the pan to form the crust. Bake for 8–10 minutes, then let cool.
3. Beat cream cheese and sugar until smooth. Add eggs and vanilla, mix until creamy. Pour over crust and smooth the top.
4. Bake 30–35 minutes until set. Cool completely, then refrigerate at least 3 hours.
5. In a small saucepan, heat brown sugar, cream, and butter until bubbly. Stir in chopped pecans and let cool slightly.
6. Spoon topping over chilled cheesecake, add whole pecans, and drizzle with caramel sauce before serving.

Creamy Peppermint Pie | Cool, Fluffy & Perfect for the Holidays

My mother used to make this every December—it was the one dessert that made us feel like Christmas had officially arrived. Cool and creamy with a minty kiss and the prettiest sprinkle of crushed peppermint on top.

Ingredients:
1 pre-made graham cracker crust
1 (8 oz) package cream cheese, softened
1 (14 oz) can sweetened condensed milk
½ teaspoon peppermint extract
1 (8 oz) tub whipped topping, thawed
½ cup crushed peppermint candies (plus extra for topping)
Whipped cream, for decorating

Instructions:
1. In a large bowl, beat the cream cheese until smooth and creamy.
2. Slowly mix in the sweetened condensed milk and peppermint extract until fully combined.
3. Fold in the whipped topping and crushed peppermint candies.
4. Spoon the mixture into the graham cracker crust and smooth the top.
5. Chill in the fridge for at least 4 hours, or overnight, until set.
6. Just before serving, pipe whipped cream around the edges and sprinkle with extra crushed peppermint.

Every Christmas Eve, I’d make a tray of these with my granddaughter while we waited for Santa. They come together in minutes, and taste just like sugar cookies met a cheesecake—no oven needed!

Ingredients:
2 cups crushed graham crackers
½ cup unsalted butter, melted
2 tablespoons granulated sugar
8 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup whipped topping
Holiday sprinkles (red, green, white)

Instructions:
1. In a bowl, mix crushed graham crackers, melted butter, and sugar until it feels like wet sand. Press firmly into an 8x8-inch pan to form the crust. Chill for 15 minutes.
2. In another bowl, beat cream cheese until smooth. Add powdered sugar and vanilla; mix well.
3. Gently fold in whipped topping until light and fluffy.
4. Spread the filling evenly over the chilled crust. Top generously with holiday sprinkles.
5. Chill at least 2 hours or until firm. Slice into bars and serve with love.
