Crispy Garlic Parmesan Crusted Potatoes
Ingredients (Serves 4-6, small portions)
1 pound baby potatoes, halved (smaller portions to manage carbs)
1 tablespoon olive oil
2 tablespoons light butter, melted
2 cloves garlic, minced
¼ cup grated Parmesan cheese
½ teaspoon Italian seasoning
¼ teaspoon paprika
¼ teaspoon salt
¼ teaspoon black pepper
1 tablespoon fresh parsley, chopped (for garnish)
Directions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a bowl, mix melted light butter, olive oil, garlic, Italian seasoning, paprika, salt, and black pepper.
Sprinkle Parmesan evenly over the parchment paper.
Dip each potato half, cut side down, into the butter mixture, then press onto the Parmesan layer.
Arrange the potatoes cut side down and bake for 30-35 minutes until golden brown.
Let cool slightly, then lift with a spatula.
Garnish with parsley and serve warm.
