Is it a cookie? Or a brownie? We can never decide. All we know is they’re fudgy, so chocolaty and tender and we cannot stop making them- seriously.

•1/2 cup Jif Natural Peanut Butter
•1/2 cup Thai Kitchen coconut cream
•1/4 cup Crown Vanilla Infused maple syrup
•1/4 tsp vanilla
•1/4 tsp salt
•1/4 tsp baking soda
•1/4 cup nestle coco powder
•3/4 cup of oat flour
•1/4 Nestle Allergen Free chocolate chips

1- Pre-heat oven to 350 degrees
2- Combine peanut butter, coconut cream, vanilla and maple syrup in bowel
3- In separate bowel combine salt, baking soda, coco powder and oat flour
4- Combine dry ingredients into wet ingredients
5- Mix in chocolate chips
6- Scoop and roll into balls and place in baking pan, leave dough in balls or just slightly flatten- careful to leave dough thick still on pan. Dough will make 9-10 cookies
7- Bake at 350 degrees for 10-12 minuets. Always start at the 10 minuets and add additional time as needed

Top with optional powdered sugar. This recipe is so customizable, you can replace the coconut cream with equal parts pumpkin puree or a dairy free yogurt alternative. Let fully cool before storing.

Our homemade brown sugar rub turns into a satisfying caramelized glaze while on the smoker making these tender bites juicy and bursting with flavor!
To make you will need

•1 lb pork belly burnt ends
•1/2 cup brown sugar
•2 tbsp smoked paprika
•1 tbsp garlic powder
•1 tbsp onion powder

1-Set smoker to 225 degrees
2- cube burnt ends into 1 inch squares and then place in a gallon freezer bag
3- combine brown sugar, smoked paprika, garlic powder and onion powder into a bowel
4- pour seasoning rub into bag and shake to fully coat burnt ends
5- place on smoker (recommend cooking on a baking cooling rack), smoke at 225 with wood pellet of choice for approximately 2-2.5hrs

Reese’s Peanut Butter Bark 🥜🍫

With my husband asking for these three times in one week, it's clear they're a hit - plus, they're ridiculously easy to make and disappear quickly in our household.

•1 cup almond flour
•1/2 cup Jif Natural peanut butter
•1/4 tsp vanilla
•1/4 tsp salt
•3-4 tbsp of maple syrup
•1 cup Nestle allergen free chocolate chips
•1-2 tsp coconut oil
•8x8 pan lined with baking sheet

-Combine almond flour, peanut butter, vanilla, salt and maple syrup in bowel
-Pour peanut butter mixture into pan and spread evenly
-Pour chocolate chips and coconut oil into microwave safe bowel and heat in microwave, stirring every 30 seconds until melted
-Pour melted chocolate over peanut butter layer and spread evenly
-Place in fridge or freezer until chilled all the way and then break into pieces

That’s it. Such an easy treat to satisfy those sweet cravings, espically while up feeding the twins in the middle of the night!

Homemade Vanilla Cinnamon Creamer ☕️

•1 1/2 cup barista style oat-milk
•2 tbsp vanilla bean powder
•1 tbsp brown sugar
•2 tbsp maple syrup
•1/4 tsp cinnamon
•1/4 tsp salt

-Combine, and SHAKE!

Vanilla bean powder will take a while to fully dissolve. Shake before each use.

Banana Chip Breakfast Oats🍌🍫

Dairy free, soy free, egg free and nut free- this baked oatmeal is simple and so easy to make!

•1 ripe banana
•1/2 cup oat milk
•1 cup oats
•1/4 cup ground organic flaxseed
•1/4 tsp vanilla
•2 tbsp Crown Vanilla Infused maple syrup
•1/4 tsp salt
•1/4 tsp cinnamon
•1/4 tsp baking soda
•Nestle Allergen Free choclate chips, or Enjoy Life choclate chips
•Earth Balance dairy and soy free butter alternative
•8x8 baking pan

-Preheat oven to 350 degrees
-Mash banana and add to bowl
-Add oat milk, vanilla, maple syrup, salt, cinnamon and baking soda and combine
-Mix in oats, ground flaxseed and desired amount of chocolate chips
-Add earth balance butter to 8x8 baking pan and place in oven just long enough to melt butter then remove and grease pan with melted butter
***Optional- garnish top of oats with sliced banana and chocolate chips
-Add baked oat mixture to pan and bake at 350 degrees for 15 minuets, or until tooth pick comes out mostly clean in middle

Brown Sugar Hickory Smoked Salmon 🎣

This wholesome meal is a perfect blend of savory and sweet. It’s nutrient dense and works great for our dairy and soy free dietary needs!
Recipe for the full meal included below.

•2 skinless salmon filets
•2 red potato’s
•Asparagus
•Izzio Bakery Rosemary and Garlic Focaccia
•Organic extra virgin olive oil
•Salt
•1/4 cup Brown sugar
•1/2 tsp smoked paprika
•1/4 tsp onion powder
•1/4 tsp garlic powder
•Hickory wood pellets

-Load hickory wood pellets and set smoker to 225 degrees
(**Note, if not using a smoker for this recipe then I recommend cooking salmon in oven at 375 degrees**)
-Combine brown sugar, smoked paprika, garlic powder and onion powder then season salmon generously, saving some of the seasoning for the asparagus later
-Place salmon in smoker and cook at 225 degrees for approximately 3 hours, or until reaching an internal temperature of 140-145 degrees

-When salmon reaches 130-135 degrees, place potato’s to boil
-While potato’s are boiling spread asparagus on baking pan, leaving room for the potatoes, and drizzle with extra virgin olive oil then season with remaining seasoning left over from salmon
-When potato’s are fully cooked remove from water and use a bowl to smash potato’s, place on pan with asparagus then drizzle olive oil on top and sprinkle with salt
-Broil asparagus and potatoes on high for approximately 8-10 minuets or until asparagus is done and potato skin is slightly crispy, monitor closely on broil to prevent over cooking
-Remove salmon from smoker at 140-145 degrees internal temp
-Recommend toasting Izzio Bakery bread per package instructions as desired

Smoked Pork and Potatoes 🥓🥔

This hearty and smoky dish can be enjoyed as a breakfast, appetizer or side dish and is the perfect cold weather comfort!

*Dietary note, the exact products used in this recipe work for our personal soy, dairy and egg free needs.

•3 red potatoes
•3-4 strips of naturally hickory smoked bacon
•3 slices of Kentucky Legend hickory smoked ham
•Traeger’s Traeger Rub seasoning
•Earth Balance dairy and soy free butter
•Optional rosemery and thyme

-Load hickory wood pellets (or pellet of choice) into smoker and set to 300 degrees
-Wash and cut potatoes into small cubes
-Slice ham and bacon
-Add potatoes, bacon and ham to aluminum foil pan and season with Traeger Rub seasoning
-Place on smoker at 300 degrees
-Add dairy and soy free butter to pan and stir after 45-60 minuets on the smoker
-Smoke until potatoes are tender and cooked, total smoking time at 300 degrees is approximately 2.5-3 hours
-Top with rosemery and thyme as desired
