Looking for a delicious and simple dinner idea?! Try Meaty Eggplant Parmesan!

Ingredients
- 2 lbs Fred’s Farm Grass Fed Grass Finished Ground Beef
- 2 Eggplants
- 1 quart and 1 pint of Pizza Sauce
- 4 teaspoons Minced Garlic
- 1/2 tsp Dried Oregano
- 1/2 tsp Dried Basil
- 1/4 tsp Red Pepper Flakes
- 2 tsp Salt (or to taste)
- 1 cup Shredded Mozzarella
- 1 cup Shredded Parmesan
- 2 tbsp Olive Oil

1. Preheat oven to 385 degrees Fahrenheit
2. Fry up ground beef in a frying pan until brown. Once brown, add minced garlic and stir around and let sit for a couple minutes
2. Add pizza sauce and dried seasonings. Lower the heat and bring to a simmer. Add salt to taste and let simmer while cooking eggplant (roughly a half hour).
3. Cut up the eggplant in 1/2 thick slices. Heat a skillet and add olive oil. Fry the eggplant in olive oil until slightly brown then dab dry using a paper towel.
4. Shredded some fresh mozzarella and Parmesan cheese.
5. Spread a thin layer of sauce at the bottom of then pan. Then layer with eggplant slices and cheese.
6. Repeat process with layer of sauce, eggplant, and extra cheese on top!
7. Bake at 385 loosely covered with foil for 35 minutes.

Note: you can also use fresh basil to enhance your dish!
