A BIG brew day in Santa Claus, IN.
A traditional all grain recipe included the step of "decoction mashing" which is a traditional technique where a portion of the mash is removed, boiled in a separate vessel, and returned to the main mash to raise its temperature.
Decoction was used long before accurate thermometers existed, and boiling a precise fraction of the mash was the reliable way to hit specific temperature rests.The final product will be 21 gallons of hefeweizen. PROST! (See comments for additional pics.)
