Hiked around Bryce Canyon National Park this morning. After, we drove down to Beaver, Utah to check out The Creamery. 

Not only do they offer a wide variety of their fresh cheeses, they also have a restaurant that offers breakfast and lunch. I opted for their patty melt.  Fresh ground beef patty tucked in grilled marble rye brad with grilled onions, two types of cheeses and thousand island dressing. It was grilled to perfection.

Every time we drive through Las Vegas, we make sure to stop at Tacos El Gordo, our favorite taco spot. We have two locations that we like to visit. The one on Cheyenne Avenue is convenient to access. The tacos are unbeatable. They make fresh corn tortillas for each order!

If you’re ever in Costa Mesa, California, Mercado Gonzalez Northgate market is a place you must check out! We checked it out for the first time today. They have an amazing selection on specialty grocery items. They also have several restaurants in the market preparing a wide variety of fresh authentic Mexican dishes. They’re freshly made churros comes from a 100-year-old recipe and they are absolutely to die for. We will be back!

Smoked salmon tonight! Brined it over night with brown sugar and kosher salt. One cup of brown sugar to a half a cup of kosher salt. I packed that on the salmon, covered and put in the refrigerator overnight. Set the smoker to 180°F. Rinsed the salmon, patted it dry and smoked it for three hours. So easy and super good. My wife loved it!

Erick Schat's story is what the American Dream is all about. His family came here from Holland after World War II and started their business here. He passed away in 2021. He wanted his bakery to be fun place like Disneyland. Trust me, it’s a very fun place! 😊
