Garlic Season has begun! With both green garlic and garlic scapes in store this week it's time to consider spring garlic pestos and purees. Purees can be preserved in the freezer for adding spring garlic flavor to your dishes year round. Simply process in your food processor and spoon the puree into ice cube trays, then freeze and store. Or, go for a fresh seasonal pesto as a treat. Here is another recipe to try, Double Garlic Soup! www.goodstuff.recipes/recipe-view/double-garlic-soup/

Tomatoes are AMAZING! Domesticated and bred from humble berries over 8000 years ago, there are now ten thousand different varieties! Some of which do well in northern climes and are chosen by our co-op growers as proven producers. Tomatoes are high in Vitamins A and C, as well as potassium and Vitamin K. Summer eating at its very best! Transplanting weather looks pretty perfect, order some plants today, pickup on Friday, and plant over the holiday weekend- double checking for possible frost of course!

This week at the Co-op we are highlighting Buckwheat's Market Garden. Their sustainable growing methods allow them to maintain the unique ecological and biological diversity of Northern Michigan. They grow over 20 different crops throughout the season that begin from seeds sown in their greenhouse. They enjoy experimenting with unique varieties that capture the fresh taste of spring, the sweetness of summer, and the hardiness of fall.

It is our one year anniversary today, when the future members of the Torch Lake Co-op decided to band together to streamline your local food experience in the face of a pandemic. But it is also the two year anniversary of a meeting of minds that presaged the co-op, the East Bay Small Farm Guild annual meeting. Incubated and hosted by Crosshatch Center for Art & Ecology the guild spent the time envisioning ways in which us small farmers could help each other out, thus forming the beginnings of our plan to collaborate.

Our producers this week are grappling with the exponential nature of spring production. Suddenly hens and mushrooms triple production. Seedlings outgrow their containers overnight. It's a little surreal how quickly spring inspires and conscripts us to be ultra-productive. This week, if you have the time, we would love to hear from you about how our co-op can best serve your needs.

The OFN is a wholly remarkable non-profit open source platform that enables ethical supply chains globally, allowing producers to create resilient food economies locally. Shopping that makes the world a better place. It’s a great shopfront to sell food through as an individual enterprise, but where it really gets exciting is when there’s a community of producers working together like us, to help create a food system with social and ecological health at its core. An heirloom bean, the Calypso, is the Witt Family Farm's favorite. Sold by the pound through the co-op, their dry beans are remarkably nutritious, being high in iron, calcium, magnesium, potassium, phosphorous, vitamin B-6 (folate), and other trace minerals. Plus they are very high in protein and fiber. Soaking and cooking them yourself makes for a very cost effective and healthful meal. The Witts have shared their two favorite recipes for the Calypso Bean, posted in comments.

this is how we water our hoophouses in february now. we fill up these tubs with water, connect a hose and a pump, and spark up a battery. it works pretty well, all things considered. certainly it’s not the ideal way to water a remote location, but for me it beats laying down long irrigation lines and setting up/draining out our seasonal pump system when it is going to freeze over and over again this next month. we knew this was going to be a tricky thing when we decided to grow in our back field, but the physical separation of home and work feels worth it until we can invest in a more permanent water solution to growing in the shoulder seasons. fun fact: before we got this tractor, that water hauler was me, a couple of sleds filled with 5 gallon buckets of water, and a backpack sprayer (don’t test my commitment to spring leafy greens!) my back and body thank you, sweet diesel goddess. onward an upward in the name of bountiful spring crops!
