This week we made BTX! Jack. After 30 days it will be rubbed in olive oil and cocoa. Then aged another 30-90 days. The longer it’s aged the drier and sharper it will become.

Majorero is a Spanish cheese made in the Canary Islands with goats milk and rubbed with olive oil and pimento. Haro Cheese Red Handed is made in the same style as the traditional Majorero but with raw cow’s milk giving the cheese a creamy texture. This batch was just made, in 30 days once the natural rind forms it will be rubbed with olive oil and paprika then aged another 30-60 days before selling.
