How much sleep do you need during pregnancy? Lots - starting with the first trimester. Here is an excellent article from Live Science on the reasons behind the increased need for sleep during each trimester of pregnancy, especially during the first and third. "A lot of women are totally surprised by how fatigued they feel during the first trimester, said Kathy Lee, a professor of nursing at the University of California San Francisco, who has studied how pregnancy affects sleep. As their body changes and pregnancy discomforts make it more difficult to fall and stay asleep, Lee recommended that mothers-to-be spend at least 8 hours in bed each night so they can get at least 7 hours of sleep.... Sharing a recipe for Carrot Cake with Cream Cheese Frosting from Eating for Pregnancy, page, 200, by popular demand. Make for a celebration, or "just because."😍😘😜 Enjoy! Indulge! Be happy!

Carrot cake with cream cheese frosting
When your sweet tooth calls, head to the kitchen to bake this delicious cake. Frost it for a celebration or keep it simple for a family dessert or snack. Some grocery stores have salad bars that carry finely grated carrots, which makes the cake a cinch to make. An equal amount of all-purpose flour can be substituted for the whole wheat flour. Gluten free? Use an equal amount of gluten-free all-purpose flour. Vitamin A enhances your baby’s cell and nerve development.

Makes one 13 x 9-inch cake; serves 12
Carrot cake
Cooking spray and flour, for the baking pan
3/4 cup all-purpose flour
3/4 cup whole wheat flour
2 teaspoons baking soda
11/2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
3/4 cup canola oil
4 large eggs
1 cup sugar
2 cups grated carrots (about 4 large carrots)
One 8-ounce can crushed pineapple, drained
1/2 cup chopped walnuts or pecans

Cream cheese frosting (makes about 21/2 cups)
One 8-ounce package cream cheese, slightly softened
4 tablespoons unsalted butter, softened
1 tablespoon vanilla extract
3 cups confectioners’ sugar

Preheat the oven to 350Β°F. Lightly grease and flour a 13 x 9 x 2-inch baking pan.

In a large bowl, combine the all-purpose and whole wheat flours, baking soda, baking powder, cinnamon, and salt, stir and set aside.

In a large bowl, combine the canola oil and eggs and beat with an electric mixer on medium speed for 3 minutes. Add the sugar and beat for another 3 minutes. Add the dry mixture in three batches, beating on low speed and scraping the sides of the bowl after each addition. Mix just until the flour is absorbed. With a rubber spatula, fold in the carrots and optional pineapple and walnuts until evenly distributed.

Fill the baking pan with the batter and tap gently to release any air bubbles. Bake for about 45 minutes, or until a tester inserted into the center comes out clean. Remove from the oven and let stand for 5 minutes, then invert onto a cooling rack. Cool completely.

To make the frosting, combine the cream cheese and butter in a large bowl and beat with an electric mixer on medium speed for 2 minutes, or until creamy. Add the vanilla and half of the confectioners’ sugar and beat for 1 minute longer, scraping down the sides of the bowl as necessary. Add the remaining half of the sugar and beat until the frosting is smooth and creamy. If the frosting is too thin to spread, add a bit more confectioners’ sugar. If it is too thick, thin it with 1 teaspoon of water at a time.

Fire up that grill, but before you do, clean it! Food particles left on the grill can spoil, leaving behind bacteria. Keep your family and guests healthy by cleaning your grill racks properly. Before use, brush off food debris with a wire grill brush. Heat the grill to medium and brush the racks with a little oil. Turn off the grill. When completely cool, wipe down the racks to remove any remaining grease. Remember to keep your grill covered when it is not in use. Note: If the racks are really greasy or crusty, remove and wash with a grease-cutting soap.

Asparagus is an excellent source of vitamin K, which enhances bone development. Try grilling, steaming, roasting … and top with your favorite sauce or dressing. Add to salads or wraps. Make asparagus soup. Here’s one for Roasted Asparagus from Eating for Pregnancy.

Roasted asparagus
Roasting asparagus is quick and easy. Leftovers can be sliced and tossed into a salad. A sprinkle of Parmesan is a welcome garnish. Need more protein? Add chopped hard-boiled eggs on top.

Serves 3
12 ounces green asparagus, tough bottom ends trimmed
2 tablespoons olive oil
Salt and freshly ground pepper, to taste
1 teaspoon grated lemon zest, or to taste
2 tablespoons chopped fresh dill

Center an oven rack and preheat the oven to 425Β°F. Line a baking sheet with parchment paper or foil.
Place the asparagus spears on the baking sheet and gently toss them, keeping tops and bottoms facing the same direction, with the olive oil, salt, and pepper until well coated. Spread out in a single layer.
Roast for about 6 to 8 minutes, or until crisp-tender (the time will depend on the thickness of the spears). Remove from the oven. Add the lemon zest and dill, and transfer to a serving dish. Serve warm or at room temperature.

Approximate nutritional information: 3/4 cup (or one-third) of the asparagus

Did you know? Adequate vitamin D from the sun can help alleviate feelings of depression. If you think you may be suffering from depression, it’s a good idea to get your Vitamin D level checked. There is an inverse relationship with vitamin D levels and depression. People with low levels of vitamin D have more depression, and those with higher D tend to have less. At least 500 mcg or 200 IU are recommended daily. Sending love from Eating for Pregnancy.

Stretching helps lengthen muscles and loosen up your entire body, melting away tensions and stress. Stretching is generally safe during pregnancy, but as with all exercise, please ask your doctor or care team for approval before you start anything new.

Here are some basic safety tips to keep in mind while stretching: 1) Warm up a bit. Stretching after a walk is ideal, even a walk in place with high knees. 2) Don’t bounce. Hold a stretch for 10 to 30 seconds. Let go if you feel pain. 3) Don’t over stretch. During pregnancy your body is naturally more flexible. Avoid deep stretching. Stay in a good range and hold steady.

Eliminating Racial Disparities in Maternal and Infant Mortality - Center for American Progress

Maternal health has reached a CRISIS point for African American moms. PLEASE read this article to understand why. The reasons are not all the obvious ones. A big factor is the stress of racism in America. We can't ignore this any longer.

"If the fact that the United States has the highest maternal and infant mortality rates among comparable developed countries is not bad enough, the survival rates for African American mothers and their infants are even more dismal. African American women across the income spectrum and from all walks of life are dying from preventable pregnancy-related complications at three to four times the rate of non-Hispanic white women, while the death rate for black infants is twice that of infants born to non-Hispanic white mothers."

This report provides a comprehensive policy framework to eliminate racial disparities in maternal and infant mortality.

Huge Racial Disparities Found in Deaths Linked to Pregnancy

African-American, Native American and Alaska Native women die of pregnancy-related causes at a rate about three times higher than those of white women, the Centers for Disease Control and Prevention reported on Tuesday.

The racial disparity has persisted, even grown, for years despite frequent calls to improve access to medical care for women of color. Sixty percent of all pregnancy-related deaths can be prevented with better health care, communication and support, as well as access to stable housing and transportation, the researchers concluded.

β€œThe bottom line is that too many women are dying largely preventable deaths associated with their pregnancy,” said Dr. Anne Schuchat, principal deputy director of the C.D.C.
