Weekend Pecan Waffles

Protein, B vitamins, and folate promote your baby’s cell, brain and nervous system development and muscle building.

These waffles are a weekend treat that can be refrigerated or frozen for weekday breakfast bliss. If you do not have whole wheat flour, you can use 13/4 cups all-purpose flour or oat flour; gluten-free flour works, too. Dairy free or vegan? Use your favorite nondairy milk and coconut oil instead of butter and omit the eggs. To prevent cooked waffles from getting soggy, lean them up against each other in a tent-like position to allow the steam to escape. If they do get soggy or cold, toast them briefly in a toaster or place them directly on the rack of a 350°F oven for a few minutes.

Makes about eighteen 5-1/2 x 2-1/4- inch waffles

3/4 cup whole wheat flour
1 cup all-purpose flour
1 tablespoon baking powder
1 tablespoon sugar
1/2 teaspoon salt
2 large eggs
1 large egg white
6 tablespoons unsalted butter, melted
2 cups reduced-fat milk
1/2 cup chopped pecans, toasted
2 tablespoons ground flaxseed (optional)
Cooking spray, for greasing the waffle iron or melt a little extra butter

Place the flours, baking powder, sugar, and salt in a large bowl and whisk together.

In a second bowl or large measuring cup, whisk together the eggs, egg white, melted butter, and milk.

Add the wet ingredients to the dry ingredients and whisk together until well blended. Stir in the pecans and ground flaxseed, if using.

Preheat the waffle iron on its high setting. Spray the waffle grids with cooking spray. Spoon some batter onto the hot iron and spread to within 1/4 inch of the edges. Close the lid and cook until the waffles are golden brown. Repeat with the remaining batter. Serve immediately.

Here's one of our favs from Eating for Pregnancy!

Roasted new potatoes and bell peppers

GF DF V

Vitamin A, C, and B vitamins optimize your baby’s cell, nerve, brain, and bone development, and C boosts your immunity.

Potatoes and bell peppers are a natural combo. Jazz things up with rosemary or garlic oil, or play around with other herbs, such as fresh thyme. The roasting time will vary according to the size of the potatoes. You’ll keep coming back to this recipe – we promise!

Serves 4

11/2 pounds red bliss or new potatoes, scrubbed clean, dried, halved (cut any large potatoes into quarters)
1 cup diced red bell peppers
3 tablespoons olive oil
3 garlic cloves, skin on, smashed with the side of a knife
3 fresh rosemary sprigs or 1 tablespoon dried rosemary
Salt and freshly ground pepper, to taste

Preheat the oven to 450°F. Have ready a large baking sheet lined with foil.

Bring a large pot of salted water to a boil. Add the potatoes and cook for 5 minutes. Drain the potatoes well and allow them to air dry for about 2 minutes. Then, spread them out on the baking sheet along with the red bell peppers, and drizzle with the olive oil. Add the garlic cloves, and rosemary sprigs, and mix with a large spatula. Season with salt and pepper and mix again.

Roast for 15 minutes, then remove from the oven. The potatoes should be light golden and soft at this point. If they are not, continue to roast. Serve warm.
