Simple Summer Dinner for Shannon🔥🤩
Easy, simple, delicious, nutritious, and ready in less than 30 minutes, this dinner turned out pretty good! I love being able to make a full meal on our Weber Grills. I sit on our porch that is being taken over by my plants, sit with Lucy, and just take a moment to breathe, relax, and soak up summer.☀️

What I eat serves ME...This has not been an easy journey, but I am getting there and I can see the change. Do the WORK...Put in the TIME...You are worth it and your mind and body will reward you.🙏🏻💙
For Example:
✔️I LOVE meat...Steak, beef, bacon, and even pork belly! I don’t eat it all the time, but I notice that when I am doing a lot of strength training my body craves it and I feed it;
✔️ Sourdough is my favorite bread and Trader Joe's is the BEST! I love the huge slices and it is only $2.99 a loaf. And YES I eat carbs. I need carbs...We all need carbs;
✔️Currently cannot get enough of spinach and mushrooms...Which is interesting, since they are both jam packed with protein, fiber, antioxidants, iron, vitamins, and minerals! My body wants all the GOOD STUFF!💙
- 2x slices of Trader Joe's sourdough toast + ground beef seasoned with Dak's spices KABOOM & Street Taco + a handful of spinach, mushrooms, tomatoes, onions + dollop of Trader Joe's guacamole + healthy drizzle of hot sauce!👍🏻🔥💙

NO restriction, NO insane workouts, and NO negative talk...When I need to get my gut health back on track I give myself lots of GRACE, lots of water, healthy movement, and GOOD MOOD FOOD!
This meal is beyond easy to make, gentle on my stomach, and is jam-packed with a healthy mix of protein, fats, whole grains, and don’t EVER forget the veggies (I cannot stop eating all the mushrooms as of lately). Not only does this meal nourish my body...it is easy to make and requires hardly any cleanup!
Salmon:
✔️Season the salmon with Dak's spices Lemon Pep & KABOOM;
✔️Place salmon and a handful of cherry tomatoes and mushrooms into the GoWISE USA air-fryer that is lined with Reynolds wrap and sprayed with cooking spray;
✔️Cook at 380 degrees for 20 minutes!
Rice:
✔️Place one cup of rice into the rice cooker and season with Dak's spices KABOOM
✔️Hit the button and serve when ready!

✔️I NEVER used to eat toast in the middle of the day, definitely one of those ED rules I made up and followed for years...not anymore;
✔️I NEVER smother my toast. I like to tear the pieces off and individually spread it with a little bit of guacamole and jelly;
✔️YES...jelly & guacamole are a weird, but really good combo!
- 2x slices of sourdough toast + scrambled eggs seasoned with Dak's spices KABOOM & Nothin’ But Ranch + a handful of spinach, tomatoes, onions + dollop of guacamole + homemade rhubarb strawberry jelly!

Savory Oats are so UNDERRATED!
Even though it’s been hot and humid here in Charleston, I cannot eat enough oatmeal. For someone who cut it out of their diet for years, now is eating it daily and enjoying every single bite. It’s easy, good, ready in minutes, versatile, and has lots of health benefits. I LOVE that I am able to listen to my body and feed it what it is craving...I wonder what this week's cravings will be?!?!?
- ½ c oatmeal + 2x fried eggs + handful of spinach + sauteed mushrooms and onions + ½ avocado + sprinkled with Dak's spices KABOOM and Everything But Tha’ Salt!

Raise your hand if you are ALL about easy, simple, healthy summer DINNERS!!!
Last week I made tuna fish salad THREE nights in a row for dinner! I was bored with food. I wanted something that required minimal effort. I didn’t want to food shop. It was hot...I was moody with PMS...WAH WAH WAH...pity party! I had a couple moments last week. I have them, give myself grace, still nourish my body, still do the workouts, and know that it too shall pass!
Two things though...This garlic rosemary bread from Costco is AMAZING! Two gigantic loaves for under $7.00. I slice it up and freeze them. And that dollop of “Dill Pickle Hummus” is so good, if you like pickles of course...I put it on everything!
- 2x thick toasted slices of Costco rosemary olive bread + cabbage + sliced cherry tomatoes + a heaping spoonful of Trader Joe's-Mt. Pleasant,SC “Dill Pickle Hummus” + Costco white albacore tuna mixed with and Dak's spices Nothin’ But Ranch & KABOOM!

I LOVE how certain foods can bring back all the GOOD memories! As we know, food is so much more than just the food and when there are stories behind the meals it makes it that more nostalgic and delicious. My Mom is an amazing cook, but gosh darn she could make a mean tuna salad! I will NEVER say no, if she offers to make a tuna sandwich or even a tuna melt!
**OMG...a tuna melt sandwich on an English muffin with slices of American cheese that were bubbly and burnt?!?!? ANYONE ELSE LOVE THESE? Okay I digress!**
No matter how hard I try, my tuna doesn’t even compare to hers. Maybe because she puts in a huge dollop of mayo, the perfect amount of celery, onion, and spices, or that it just has that mother's touch. Hers just always tasted way better than mine and still does.
And since it feels like summer here in Charleston the craving for big crunchy salads sounds really GOOD now and look at me eating more variety too! I love tuna fish. I know it is hit or miss with a lot of people, but I eat a lot of it and it brings back those happy childhood memories.💜
- Chopped lettuce + cabbage + chickpeas + walnuts + white albacore tuna mixed with Duke's Mayonnaise and Dak's spices KABOOM!

I find it fascinating how our cravings for certain foods are always changing! These cravings can change with the seasons, our workouts, and our moods. Learning to acknowledge the cravings and feed those cravings makes me feel really good mentally and physically and allows me to do ALL THE THINGS with a better attitude and stronger body!
Last week, I was eating a lot of cherries and red meat...This week it is all about bananas and eggs. Learn to listen to these cravings and DO YOU!

I will NEVER get tired of simple meals like this! Ready in 10 minutes or less...Loaded with all the nutrients...and damn DELICIOUS it is a meal that gets eaten a lot these days!
One of my homework assignments that I have been working on since starting this healing process is to eat more variety. For years (YES...years), I would eat the same damn foods every day. I honestly don’t know how I did it, but I got stuck in the routine and it was not healthy for my gut, my training, my mind, and my overall well-being.
Unbreaking that pattern has been hard at times, but eating ALL THE FOODS, has helped me step out of my comfort zone, has helped my body heal, and has allowed me to get back to a healthy and happy place of loving food again. A step in the right direction...Go ME!
