Mandan Mondays takes you on a gastronomic adventure through Mandan, providing a unique behind-the-scenes look into the stories, secrets, and flavors that make these local dining establishments true gems in our community.

Phil— Hey, Greg! How’s life? What do you do outside of work?

Greg— I’m usually with my little girls these days, I take them swimming a lot. We really try to do family stuff with the kids.

For my fun, I’m usually watching football, basketball, that type of thing. Play a little pool here and there.

Other than that, I’m really just doing stuff with the kids. Just living life!

Phil— Love it! How did you start cooking?

Greg— My grandmas, man, and I’ve been in the restaurant business going on 25 years or so, maybe longer.

I started cooking with my grandma when I was seven. Both my dad’s grandma and my mom’s grandma taught me how to cook. I would do their recipes. A lot of what I serve here are my grandma and mom’s recipes, and I’m just doing it.

This is my passion, I don’t do it for the money. I do it because I love to cook, you know? I’m living my dream, actually. This is something I always wanted to do as a kid from Gilmer, Texas, right outside of Dallas.

Phil— I get that. It’s important to spend our efforts on something that gives us a sense of purpose.

How did it turn into a career, and eventually this business?

Greg— I’ve always loved food, man. Cooking since I was seven years old, it’s been a part of my life as long as I can remember.

I wanted to open this place because I know I’m going to put in all my effort. Have you ever had a job that you don’t like but you stay at for the paycheck? Just working for the paycheck. That’s going to make you miserable, and that’s going to make everybody else miserable around you.

I’ve learned to find something that you actually love and something you can put the time into that will provide for you. Something that you’re happy to get up and do for work.

When I come here, I’m happy. I’m in my happy mode ‘cause I’m doing what I love to do!

Phil— What do you hope to bring the community via your business?

Greg— I want people to come here and feel like they’re at home. I want you to know you can bring your kids, your friends, whoever, and you can enjoy yourself and be relaxed.

Don’t have to worry about no drama, none of that, and just feel at home and be loved. I’m going to give you love as soon as you walk in the door.

I just want people to feel at home.

Phillip On Food— How did Greg’s BBQ Soul Food start?

Greg— I got this building back in November, but didn’t get it opened until around June 10th. It’s still fresh but it’s good.

We were in Gateway Mall before, which is where we started. We had too many complaints about the smoker and too much smoke, so we found this place and moved over here to get things ready.

I’m building the business from the ground up! It’s my first time starting a business so it’s all learning experiences for me.

Give me all the feedback, including the negative. That’s how I learn what not to do!

Phil— What do you hope to bring the community via your business?

Greg— I want people to come here and feel like they’re at home. I want you to know you can bring your kids, your friends, whoever, and you can enjoy yourself and be relaxed.

Phil— Tell us a little about Greg’s BBQ Soul Food! What have you created here?

Greg— I created a home environment. Like I say, everything is about being at home and being friendly to the customers, just making them feel good. That's the start of it.

We sell barbecue. We sell Philly cheese steaks. We sell shrimp po’ boys. We sell catfish, we sell ribs, we sell brisket, we sell barbecue chicken. Basically, a little bit of everything.

We got the alligator po’ boys. We got fried frog legs. We got mashed potatoes and gravy.

The menu switches daily. I'm trying to keep it to where you don't get worn out on the same food.

That’s the catch with restaurants, you can sit and sell the same food every day. But who wants to eat the same thing every day?

For example, I like to make corn and green beans a different way all the time. I can make the same thing, but it won’t always taste the same. You need that variety there.

How else can you keep up with society? Somebody else is working to get better, and they’ll be better than you. That’s why I like to keep switching up my recipes and learning, to keep getting better.

Phil— What’s YOUR favorite item on the menu? What’s a best seller here?

Greg— Man, that’s tough. I’d say the ribs or the brisket for me. Those are my best sellers, too.

The Philly cheese steaks, the shrimp po’ boys and the catfish plates are probably my best sellers on the non-bbq side.

Phil— Why should someone stop by Greg’s BBQ Soul Food?

Greg— If you like good food and you want to get your moneys worth, come visit! We’re going to give you more than what you pay for. The portions are bigger and the food is better.

I’ll go on record saying this: my bbq is the best in the state. If you want to see for yourself, come check it out!

I sat down and spoke with Greg last week just prior to him opening the doors for the day. We spoke of how his grandmothers taught him to cook, why he got into the business and a little of what he hopes to bring to our community. It’s good to see a new type of bbq in town, providing more variety for everyone to enjoy.

Phil— Hey, Brian! How’s life? How do you spend your time when you aren’t working?

Brian— It’s good! A lot of time with the family. Fishing, too, or heading down south when we can. It's nice weather down there.

We have two kids, they keep us busy, especially my daughter with high school swimming. We’re traveling pretty much every weekend for that, but it’s fun and she likes it.

Phil— Why food? How did you get involved with processing meat?

Brian— When I was younger, my grandpa owned Missouri Valley Meat Company, so I’ve been around the meat business since I was a little kid. I actually worked there and helped with the company when I was younger.

When I was in high school, Dan opened Butcher Block Meats and I worked here right away. I ended up going off to college for a few years and Dan wondered what I was going to do afterwards. I wasn’t sure myself.

So, I came back to Butcher Block because I always liked the meat business, and that was that. It’s been working ever since!

Phil— What’s your favorite cut of steak?

Brian— You really can’t beat a nice filet mignon. A nice piece of tenderloin is good. My second choice would probably be a New York strip. They’re both very good.

When I stopped into Butcher Block the other day, I was able to sit down with Braeden Kraft, General Manager, and get his perspective on things. Come to find out, Braeden has been unofficially helping out since he was about 8 years old, making this truly his second home.

I’m happy to see that the future of Butcher Block Meats is in good hands.

Phil— How’s life outside of work, Braeden?

Braeden— Well, I got a puppy! Her name is Kiara, she’s sort of a rescue. I like to spend a lot of time with her and I try to take her out as much as I can. I try to stay pretty fit, so I hit the gym once and a while. I love guns, and I shoot bow a lot as well. Anything that goes boom is a fun time. I work on cars a lot, too. A lot of stuff like that.

Work is fun for me, though, so I try to spend a lot of time here.

Phil— Awesome! I recently rescued a dog as well and it’s been incredible. What kind of pup did you save?

Braeden— She’s a little shepherd-pit bull mix! I don’t know what else is in her, but yeah, she’s a good dog. Mixes are some of the smartest dogs. They tend to care a little more, it seems. I don’t know why, but mutt’s are the way to go. I got her here in Mandan. The previous owners just didn’t seem to have enough time for her and stuff like that.

I just went to see her, I wasn’t planning on picking her up or anything. And, yeah, you know how that goes. They run right up to you and you’re like, oh, okay.

She hadn’t even been in a pickup yet or anything, so, just getting her into the truck was a crazy one. It’s been interesting! She’s at a better home now.

Phil— I know that moment! When they look at you with those puppy dog eyes and run to you like you’re their new safe place. It all makes sense right then and there. I’m happy to hear things are going well!

So, what do you like about Mandan? What keeps you here, aside from work?

Braeden— I’d say the people, and of course the businesses. It seems like you can’t really go out anywhere, even to eat dinner, without running into at least a handful of people, you know? I think that’s pretty special. A lot of places don’t have that. Even if you’re out on the river, people wave at each other. It’s pretty odd if you don’t get waved at, or you don’t wave at somebody. If you’ve traveled anywhere else, you know that’s not the case almost anywhere else in the country.

Mandan is a special place, and I’d say it’s the people that make it that way.

Phil— I couldn’t agree with you more. The people are what make or break an area, and we are very fortunate for the community we have in this area.

What’s your favorite cut of steak?

Braeden— Oh, I’d go with a two inch New York strip as my go-to. Either that, or a good rib eye. It’s always between those two and it’s hard for me to decide. I pretty much smoke everything, even burgers. So I usually end up putting them on the traeger for about an hour at a low temp, and sear it up for around five minutes. It’s pretty good!

I use our house seasoning, and put it on pretty much everything. I’ve tried most of the seasonings, you know, being here and waking a bottle of seasoning home every week. Our house blend is what I keep coming back to!

Phil— You got me hungry now! Is there anything you’d like to add as we wrap up this interview, Braeden?

Braeden— I’d like to say thank you to all of our customers, especially those who have been with us over the years. Hopefully I can start to learn everybody’s names more than I already do! We just love the opportunity to meet new people in the area. People who don’t know where to begin, you know, as far as what cuts to get. They’ll use what we call “describer words",” and we can get them to where they want to be. It’s super common for us to have folks come in here who don’t even know where to start. But that’s where everyone starts, so just ask questions! That’s what we’re here for, and we’d love to help you out.

Phil— Let's switch to the business side now. Tell us about Butcher Block Meats. What has been created here?

Brian— We carry the freshest steaks, cut roast beef, pork, chicken, ground beef, tiger meat, a lot of thing. We carry a lot of specialty products. We do a lot of custom processing also, whether that's beef, deer, elk, whatever it may be. If you bring it in, we'll take care of it for you.

We've doubled in size over the last 33 years, and it keep growing, which is good. We're thankful.

Phil— How did Butcher Block start? How did you get involved?

Brian— My business partner, Dan Kraft, started the business back in 1990, and I was a senior in high school at that time. I started working here in 1990 until 1991, when I graduated and went off to college. Dan wondered what the heck I was going to do, and I didn't really know either. He asked, why don't you come back to Butcher Block?

So, that's what I did. A couple years after I came back, around 1998, I bought in. That was, what, 25 years ago?

So, it's been going since 1990. I've been coming and going, and staying now for the last 25 years. It's been a good long haul already!

Phil— That's quite a long time! Do you source anything locally here?

Brian— We source quite a bit locally! A lot of our beef comes locally, along with chicken and pork. If something doesn't come locally, as in local from North Dakota, it's within the tri-state region. We get sweet corn in for people, obviously very local, too. Other than that, we try to do our best.

A lot of seasonings come from this area. A lot of the products we have come from the North Dakota region.

Phil— Why should someone stop by Butcher Block Meats?

Brian— If they've never been here before, they should come by just to see our cases. They'd probably be surprised at how much fresh stuff we have, plus the frozen stuff. The variety and prices are competitive with grocery stores, and I think we have, by far, the largest variety of sausage, brats, slim jims, and jerky that you're going to find.

So, come on in and we'll gladly show you around!

Brian— When I was younger, my grandpa owned Missouri Valley Meat Company, so I’ve been around the meat business since I was a little kid. I actually worked there and helped with the company when I was younger.

When I was in high school, Dan opened Butcher Block Meats and I worked here right away. I ended up going off to college for a few years and Dan wondered what I was going to do afterwards. I wasn’t sure myself.

So, I came back to Butcher Block because I always liked the meat business, and that was that. It’s been working ever since!

Phil— What’s your favorite cut of steak?

Brian— You really can’t beat a nice filet mignon. A nice piece of tenderloin is good. My second choice would probably be a New York strip. They’re both very good.

Meet Kendyl,

I sat down with Kendyl of Balancing Goat and learned a little about her corner of the world. We talked a little about farming, baking for family members, and her favorite food items on the menu.

Phil— Hey Kendyl! Tell us a little about yourself. What’s life like?

Kendyl— I work a lot! I’ve been a working here since October of last year, and I’ve been a supervisor for a couple of months now. I also work on my family farm so I’m pretty busy most of the time. When I do find time, I like reading, baking, hiking and outdoorsy things.

Our family farm is a bit northeast of New Salem. We used to operate a dairy farm but we no longer do that. We are a beef farm and with some grain farming, and our wheat and soybeans go to our local grain elevator.

Phil— You certainly stay busy! What’s your favorite thing to bake?

Kendyl— Oh my gosh, so many things! Cookies, mostly. My grandpa recently passed away, but that was his favorite thing. When he was working in the field, I’d always bake him fresh chocolate chip cookies. That was probably my favorite thing to bake.

Phil— I’m sure he loved that! What’s your favorite item on the menu?

Kendyl— I would say my favorite drink would be the orange sunrise smoothie. For my favorite food, I’m gonna go with the three cheese, grilled cheese, and instead of the provolone I put pepper jack cheese in there. It just gives it a little extra flavor!

Hello everyone!

You may have noticed I've been inactive on this page for the past week and a half. No cause for alarm there. Actually, it's quite the opposite.

As I focus on the next steps for both BisMan Eats and North Dakota Eats, I'll be posting a bit less often. I have to ensure that I'm not spreading myself too thin, or allowing my focus to waver too much. I love sharing my own foodie experiences and I plan to continue; I just have to focus on other things before I can resume.

In 2022, we're aiming to bring you a podcast, a local foodie magazine, monthly savings bundles, and so much more. We want to further explore our local foodie scene, and not just stay on the surface. There's a whole team of humans on the other side of the food we are eating, and we think it would be great to learn more about them.

On top of that, we'll be partnering with different non-profit organizations to raise money for our community. We'll be creating limited release merchandise for sale, and will be donating all of the profits to the 501c3 organization we partner with. A rising tide raises all ships, as the saying goes.

This is just scratching the surface. It's time to grow. We can't wait to share everything with you.

Chilaquiles at Stations West in Mandan are amazing..green chile sauce, eggs, hashbrowns, meat make a great meal or appetizer. Sorry didnt take a picture, they smelled so good I dove right in when the plate hit the table!
There is a great new Facebook group called BisMan Eats— showcasing all locally owned restaurants and the great food on the menu. While we don’t qualify as a resturant, our staff and residents would say we have some of the best food in town.
