I've completely abandoned my obsession with breakfast since starting this diet...

Feels bad man... πŸ˜₯

I woke up today starving for once and thought I'd revisit my one favorite meal of the day. Best part is this is exactly what I need to be eating anyways. I did a completely stuffed, loaded protein blast 4 egg omelette. More protein from turkey sausage. Healthy carbs from potato. Healthy fats from the avocado. I threw some cheddar cheese, green onion, in there just for some extra flavor. And I went with sriracha because i always need it out some hot sauce with with my eggs. It was REALLY FREAKING GOOD.

Now I'm good for most of the day!

Also here's a tip. Don't take a mental health break from social media EVER. I've lost 1200 followers LOL. Geeze I haven't been gone that long... oh well this is the least of my worries these days. Have a great rest of the week!

I made a carnitas torta on homemade bolilo bread.

Toasted bolilo, homemade refried beans, carnitas, queso fresco, tomato, homemade pickled red onion slices, homemade pickled jalapeΓ±o, shredded lettuce, and a spicy homemade salsa.

This was AMAZING.

My diet is starting again tomorrow so I thought i would go all out this last week. Hopefully I will lose another 40 pounds this time. πŸ˜„

Made some meatball subs the other day. Pork and beef meatballs with a homemade marinara sauce. Homemade hoagie rolls as well. I toasted the rolls(a little too much on that edge as you can see), added the meatballs and marinara, and melted some fresh mozzarella over top with a sprinkle of basil.

Been working on the perfect meatball and sauce for quite a long time and im finally ready to share the recipe for both. They will be featured in my next blog post for On Your Table in a week or two as well as a couple other recipes.

On Monday I made some homemade creamy Italian dressing that had the olive oil and vinegar right in it. I thought that would be just perfect on an Italian sub so I went for it for yesterday's lunch.

I can't ever find any good decent Italian meats here so I settled for ham, Genoa salami, and pepperoni. Also put on provolone cheese, sliced onion, tomatoes, and shredded lettuce. Now normally when I make these I will add some pepperoncini, giardinera, or sliced cherry peppers. But I had never seen the sliced Fresno chiles jarred before and since I'm always looking for a spice upgrade I went with these. They were just perfect for this. My favorite part of the sandwich to be honest. I love Fresnos anyways so I'm glad to know this exists! 😍πŸ’₯πŸ’₯

Side note... I haven't been doing much cooking lately. Been on a new med and my appetite is almost non existent. This was pretty much the only thing I ate yesterday and it was way too much 🀣 So if you don't see me around as often that's the reason!
