Slow Food 🥘 Cajun Gumbo with Dust & Bloom • made the long way

This is not fast food.
This is stay-with-the-pot food.

Gumbo teaches patience.
You can’t rush a roux.
You can’t fake depth.
You can’t shortcut comfort.

You stand there.
You stir.
You listen.

🧺 Ingredients (Serves 6–8)

• Neutral oil (or bacon fat)
• All-purpose flour
• 1 lb chicken (thighs or whole cut-up)
• Andouille sausage, sliced
• Onion, diced
• Bell pepper, diced
• Celery, diced
• Garlic, minced
• Bay leaves
• Dust & Bloom Farmstead Favorite (to taste — your Flavor Insurance)
• Salt + cracked black pepper
• Cayenne (optional)
• Chicken stock (homemade if possible)
• Filé powder (for finishing)
• White rice, for serving

🌾 The Roux (where flavor begins)

Oil + flour.
Low heat.
Steady hand.

No walking away.
No multitasking.
No scrolling.

You wait for it to turn the color of dark pecans — almost coffee, never burned.

This is the foundation.
This is Flavor Insurance.

Everything else follows.

🌿 The Trinity

Onion.
Bell pepper.
Celery.

Added only when the roux is ready —
to cool it gently, soften slowly, and release sweetness.

The kitchen smells like home
before anything else goes in.

🍗 The Chicken (no shortcuts)

Chicken simmered gently
with onion, bay, and salt.

That broth becomes the base.
The meat gets picked by hand.
Returned when it belongs.

Nothing wasted.
Nothing rushed.

🌭 Sausage + Simmer

Andouille goes in.
Then the stock.
Then Dust & Bloom — layered in for depth without thinking.
Then time.

The pot barely bubbles.
Flavors settle.
Depth builds quietly.

This is where slow food does its work.

🍚 To Serve

Over plain white rice.
Finished with filé — only at the end.
Never boiled.
Always respected.

🌾 Why This Matters (Dust & Bloom Energy)
