Here’s what I meal prepped for my family of 5 this week!
1. Monster Cookie Bites. This recipe is on my website. So delicious and easy to make. A perfect healthier treat to pack in my boys’ lunches (plus my hubby and I love them too).

3. Green Juices. Love having these on hand as my boys love them and it’s an easy way to sneak in some greens and veggies. Recipe on my insta
4. Chicken Salad. Ifs so simple but flavorful and makes for a great lunch. I don’t really follow a recipe (just measure with my heart). I shred a rotisserie chicken, dice a 1/4 red onion, and slice up 2 celery stalks. In a bowl, I mix together about 1/2 cup Greek yogurt, 2-3 tbsps. Mayo, splash apple cider vinegar, a shake of celery salt, and squeeze of Dijon mustard. I’ll taste and adjust flavorings/seasonings as necessary. Add in the chicken and veggies and mix to combine. I keep it simply for my hubby but you could also add sliced grapes, almonds/pecans, and herbs too!

6. Pickled red onions. Love having these on hand to add to bowls, tacos, salads - well just about everything!
