Oxidative wines, which can be produced using a number of different methods both ancient and modern, produce a characteristically earthy/nutty/toasty quality that adds a whole new dimension (and vocabulary!) to wine appreciation.

Instead of tasting notes that include descriptions of fruit, flowers and spices, picture notes that use phrases like “baked apple,” “burnt orange,” “toasted chestnut,” and “a walk in the woods.”

Inspired by a spectacular dinner Denise and Evan had in Paris a year ago, the seven small courses will demonstrate the inimitable effect oxidative wines have on flavors that do not pair well with conventionally made wines: olives, asparagus, chiles, fermented or pickled foods, and serious umami bombs.
