RHUBARB
It’s one of the first things available at the spring markets. Rhubarb requires a hard freeze to regenerate so it’s pretty popular here in the Midwest.
You probably have had a rhubarb pie or strawberry/rhubarb jam but have you ever roasted it? Pickled it? Made a cheesecake?
This versatile vegetable has a sour note that turns rich when roasted- I tried a sheet pan chicken recipe with rhubarb and onion. It got a lot of praise from the family!
When mixed with sugar- it turns sweet and is great in crisps, pies and this delicious cheesecake bar recipe I tried from ruthannzimm
I’ve also pickled rhubarb for salad or a crunchy treat (Martha Stewart has a great recipe). And we always freeze some to make a nice treat in the winter months.
Rhubarb will still be at the market for the next couple weeks then we’ll be moving on to something else in season!
