Good tip

The pears on the tree are hard as fists, and this is the week to pick them anyway.

A European pear is the one fruit that ripens badly on the branch. It ripens from the core outward, so by the time the outside softens the middle has already gone brown and grainy. The grit in a bad pear is cells that turned to wood while it hung there in the heat. Pick it hard, at the right moment, and it ripens evenly all the way through.

The right moment is a tilt, not a squeeze. Lift a pear sideways to horizontal. If it lets go at the stem, it is mature. If you have to pull, leave it. Asian pears are the exception, they ripen on the tree.

Then the counter or the fridge, depending on the pear. A Bartlett softens at room temperature in about a week. The winter pears, Bosc and Anjou and Comice, will not ripen evenly until they have had two weeks or more of cold, so they go in the fridge first and come out a few at a time.

You will know by the neck. Press gently at the stem end. When that gives, the pear is perfect, and the belly will still feel firm. When the belly gives, you are a day late. The cold weeks by variety, and what to do with a tree full at once, are in the comments. 🍐
