Strawberry Shortcake 🍓
A Delightfully Sweet Summer Dessert
Ingredients:
- Fresh strawberries (1 pound, hulled and sliced)
- Granulated sugar (1/3 cup, divided)
- All-purpose flour (2 cups)
- Baking powder (1 tablespoon)
- Salt (1/2 teaspoon)
- Unsalted butter (1/2 cup, cold and cubed)
- Milk (3/4 cup)
- Heavy cream (1 cup)
- Vanilla extract (1 teaspoon)
Instructions:
1. In a mixing bowl, combine sliced strawberries and 2 tablespoons of sugar. Toss gently and allow to sit for about 30 minutes to create a syrup.
2. Preheat your oven to 425°F (220°C).
3. In a large bowl, whisk together flour, baking powder, salt, and the remaining sugar.
4. Cut in cold butter with a pastry cutter or fork until the mixture resembles coarse crumbs.
5. Gradually add milk to the flour mixture, stirring just until combined. Do not over mix.
6. Turn the dough out onto a floured surface and gently knead it 3-4 times. Pat it into a roughly 1-inch thick rectangle.
7. Cut out biscuits using a round cutter, and place them on a baking sheet lined with parchment paper.
8. Bake for 12-15 minutes, or until golden brown. Allow to cool slightly on a wire rack.
9. While the shortcakes are baking, prepare the whipped cream by beating heavy cream and vanilla extract in a mixing bowl until stiff peaks form.
10. To assemble, slice the baked shortcakes in half. Spoon some macerated strawberries onto the bottom half, add a dollop of whipped cream, then place the top half over. Serve immediately.
